Abstract

PURPOSE: Milk, as a starting material, is treated with a phospholipase to hydrolyze the phospholipid in milk in a specific molecular chain position to increase the stability of the resultant acidic dairy product.
CONSTITUTION: Phospholipase A or C is added to milk, as a starting material, by 25W500 unnts per 1kg of the milk to reduce the phospholipid to less than 0.17% based on the solid cotent of the defatted milk. Then, for example, a starter is inoculated in the treated milk and the resultant fermented milk is homogenized, thereafter appropriate amounts of sweetener, flavor, juice and dilut ing water are added.
