Abstract

PURPOSE: To prepare a concentrated and mellow wine of high quality having a stabilized color tone, by using blended fruit juices obtained by concentrating with two kinds of reverse osmotic membranes having different common salt elimination ratios as a raw material fruit juice.
CONSTITUTION: A raw grape juice is concentrated by a reverse osmotic membrane exhibiting a common salt elimination ratio of 70W95% in an atmosphere of an inert gas, e.g. nitrogen gas or gaseous carbon dioxide, at a fruit juice temperature of 7W15°C to give a concentrated fruit juice (A) having a saccharide content of 24W35%. On the other hand, the raw grape juice is concentrated with a reverse osmotic membrane exhibiting a common salt elimination ratio of 96W 99% under the same conditions to give a concentrated fruit juice (B) having a saccharide content of 20W25%. The resultant concentrated fruit juice (A) is blended with at least 10vol% concentrated fruit juice (B), and the resultant blended concentrated fruit juices (A) with (B) are fermented by the conventional method.
