Abstract

PURPOSE: A food preservative with low toxicity to life regardless of the concentration thereof, containing a chelate agent and ethanol.
CONSTITUTION: One or two or more chelate agents selected from the group consisting of hydroxy carboxylic acids, e.g. citric acid, tartaric acid, malic acid, lactic acid, or succinic acid or sodium salts thereof, polyphosphoric acids or sodium salts thereof, and natural phosphoric acid componds, e.g. phytin or phytic acid, are mixed with ethanol. The resultant food preservative is used for preserving marine products and marine fish paste products, livestock meat and processed foods of the livestock meat, processed starch foods, processed soybean foods, processed egg foods, processed vegetable foods or fruits.
