Abstract
PURPOSE: To prepare powdery soybean protein having excellent solubilities in water and brine water, gelling characteristics and emulsifiability, by carrying out the extraction of proteins from cold-defatted soybean, separation of the proteins, preparation of protein dispersion, heating of the dispersion, and drying of the heated dispersion, under specific conditions.
CONSTITUTION: One part by weight of cold-defatted soybean is mixed with 5W 20pts. of water, and stirred at ≤50°C and pH 6.5W8.5 to extract the proteins from the soybean. The extract is added with an acid, and the proteins are subjected to the isoelectric precipitation usually at pH 4.2W4.8. The precipitated proteins are separated, optionally washed with water, and dispersed in water usually to a concentration of 15W/V%. The dispersion is rapidly heat to 80W100°C at a heating rate of ≥3°C/sec. The heated liquid is maintained at 85W100°C for ≤30sec, and immediately spray-dried to obtain the objective powdery soybean protein.
