食材を載せ置いた載置面に当該食材を押し当てる基礎板部(311)と、前記基礎板部の下方側に設ける引きはがし板部(314)と、前記基礎板部と前記引きはがし板部との間に挟設する弾性体(315)と、前記基礎板部上から下方側に突出して設ける複数の食材保持棒部(313)と、を少なくとも備えるとともに、前記引きはがし板部上に前記食材保持棒部が突き抜ける複数の貫通孔を穿孔した食材押圧機構(31)と、
前記食材押圧機構を上方側から支持する支軸ユニット(32)と、
前記食材押圧機構を回転させるための回転用駆動源(33)と、
前記食材押圧機構を昇降させるための昇降用駆動源(34)と、
を備え、
前記食材押圧機構を下降させて食材を押圧し、かつ、前記食材押圧機構を前記支軸ユニットの軸心回りに回転させて前記食材を回転させる食材回転装置。
