ジェランガムとホエイタンパク質とを含むゲル状食品において、ジェランガムとホエイタンパク質の各濃度におけるゲル化の可否について検討した。
・フォンテラ社製「NZMP8899」(未変性、ホエイタンパク質を85質量%含有)
・Glanbia Nutritionals社製「Provon190」(未変性、ホエイタンパク質を85質量%含有)
・日本新薬社製「ラクトクリスタル」(未変性、ホエイタンパク質を85質量%含有)
・Trega Foods社製「IsoChill9000」(未変性、ホエイタンパク質を85質量%含有)
脱アシルジェランガム(ケルコ社製)を0.2質量%、1.0質量%、又は2.0質量%になるように水に分散・溶解させ、ジェランガム溶液とした。
試験例1の結果から、ゲル化の可否がジェランガムとホエイタンパク質の濃度に依存していると考えられたため、ゲル化の可否に関わる濃度範囲を特定するために、さらに詳細な試験を行った。具体的には、下記表5に示す配合で、ジェランガムとホエイタンパク質の各濃度におけるゲル化の可否について、試験例1と同様にして試験を行った。なお、ホエイタンパク質としてはフォンテラ社製「NZMP8899」を使用した。表5及び図1にはその結果を示す。

Claims (1)
- 脱アシルジェランガムと、ホエイタンパク質分離物(WPI)及び/又はホエイタンパク質濃縮物(WPC)からなるホエイタンパク質素材とを含む酸性ゲル状食品であって、前記酸性ゲル状食品全体に対して含有する、前記脱アシルジェランガムの濃度X(質量%)と前記ホエイタンパク質素材によるホエイタンパク質の濃度Y(質量%)とが、下記式(1)、下記式(2)、及び下記式(3)を満たし、レオメーターを用いた圧縮試験(測定条件:プランジャー直径10mmを用い、移動速度60mm/分、進入距離20mm)での破断強度が0.1〜10Nであり、pHが3.0〜4.6であることを特徴とする酸性ゲル状食品。
