【発明の詳細な説明】

【発明の目的】この発明は菜切り包丁、出刃包丁、刺身
包丁、肉切り包丁、プチナイフ、万能包丁など各種の包
丁、長ネギ、玉ネギ、ゴボウ等に対する手持ちスライサ
ー、あるいは卓上電動調理器の回転刃のような各種の調
理用刃物に関するものである。
【0002】この発明は前記したように主として食品材
料の切断や切り分けに使用される刃物であって、板状の
チタン合金を素材とするものに関する。
【0003】チタン合金はステンレス鋼と同様に、特に
水分の多い環境下において不銹性であり、また合金の組
成が適当であれば実用上充分に硬度が高いので、本来、
包丁その他の調理用刃物の素材として好適である。しか
もチタン合金はステンレス鋼と較べて著しく軽量である
から、チタン合金を素材とする刃物は特に家庭の厨房に
おける使用のみならず、長時間大量の食材を切り刻む必
要のある給食作業や加工野菜製造などの業務用の用途に
も非常に向いている筈である。
【0004】それにもかかわらず、チタン合金の刃物が
一向に普及しないのは、チタン合金の板を刃物としての
所要の形状に打ち抜く場合の歩留まりが悪いことなどが
原因で、製品コストが高いのも一因ではあるが、それよ
りも、色調、重量感、光沢その他、主として刃物として
の外観に起因する需要者の商品感覚である。さらに特に
焼結物の場合、そのものの表面は不整であるため、研磨
により平滑に仕上げる関係上、食材を切り分ける際刃物
の面に食材が密着し、そのため切り離れが不良となる欠
点がある。従って、この発明はチタン合金の刃物の前記
したような需要者の商品感覚に適応させるのと同時に、
食材に対する切り離れの良好な調理用刃物製品を提供す
るのがその目的である。

【発明の構成】以下、図示した実施例によりこの発明を
詳述する。図1ないし図4に掲げたのはいわゆる万能包
丁のような両刃の包丁に関するものであるが、以下の説
明は図示のものに限らず、片刃の包丁や、スライサーの
刃、電動調理器の回転刃等各種の調理用刃物についても
当然適用される。
【0006】図1において、1は刃物の基部、11は刃
物の峰、2は刃部、21は刃先部である。図示した万能
包丁など各種の包丁は握り柄をそなえているが、図示が
省略されている。この発明に係る刃物は、チタン合金を
素材とし、板状の基部1と一体に研削、研磨により形成
された断面くさび状の刃部2の先端に付刃した刃先部2
1を有している。
【0007】以下、図2、図3、及び図4を参照すれ
ば、3は、刃先部21を除く刃物の表面をサンドブラス
ト処理することによって生じた荒し面であり、この荒し
面3には陽極酸化による酸化被膜4が施されている。但
し、図において、荒し面3は集合点で表されており、酸
化被膜4は単に太線により表されている。なお、刃部2
の表面および刃先部21の表面の図示した刃物の中心面
X−Xに対する傾斜角α,βは、図示の都合上かなり大
きく描かれているけれども、通常前者は3°〜4°であ
り、後者は7°〜8°程度である。

【実施例】この刃物は前記のようにしてなるものである
が、チタン合金の組成の一、二の適例を挙げれば、つぎ
の通りである。(チタン90%、アルミニウム6%、バ
ナジウム4%)(チタン76%、バナジウム15%、ア
ルミニウム3%、クローム3%、スズ3%)
【0009】図2に掲げたのはこの発明の第1実施例、
図3に掲げたのは図2に掲げた第1実施例と外形の同一
な第2実施例である。第1実施例の生産に当たってはチ
タン合金の板状焼結物に対し研削加工を施すことより刃
物としての外形を整え、ついで全周にわたりサンドブラ
スト加工を施す。その後電解浴に入れて通電することに
より陽極酸化し、全表面に酸化被膜を施す。サンドブラ
ストによる荒し面3における凹凸の凸部における酸化被
膜の膜厚は特に大きくなる。酸化被膜4の形成が完了
後、刃先部21の研磨を行う。この際の研磨作業によ
り、刃先部21の面の酸化被膜が除去される。
【0010】つぎに、図3は前記した第2実施例を示し
ているが、その生産の手順は、刃物の板面にサンドブラ
スト加工を施すまでは第1実施例と同様である。サンド
ブラスト加工後は、刃先部21の面を研磨することによ
り付刃し、然る後、刃物の全周面に対し陽極酸化による
酸化被膜4を施す。従って、図示のように刃先部21の
面はほとんど平滑な酸化被膜4により被覆されることに
なる。
【0011】即ち、この発明によれば、刃物はチタン合
金を素材としているので、水分や湿気の多い環境下でも
不銹性であるとともに硬度の高いものが確実に提供され
る。それにもかかわらず、チタン合金が素材である場
合、その外観はその素材に固有のプラスチック様の色調
が与える貧弱な色彩感と相まって刃物としては安物との
誤った印象を需要者に与えるのを免れないのであるが、
この発明によれば刃物の表面はサンドブラスト処理によ
り生じた荒し面3に陽極酸化による酸化被膜4が施され
ているので、荒し面3の微小な凹凸に起因する外光の乱
反射、及びその凹凸面を覆う薄膜の存在に起因する光の
屈折反射により、素材による玩具様の安物感が全く消失
し、メタリックグレーなどの高級重厚な色感が発生す
る。また、刃物の表面が酸化被膜4により覆われた荒し
面3からなっているため、刃物で食材を切り分けるとき
も、その面が食材に密着して離れ難くなるような不都合
が起こらない。

【発明の効果】かくして、この発明によれば、不銹性軽
量である素材の特長は全面的に生かされ、素材特有の低
級な色感は高級品としての佳良な色感により置換され、
