Abstract
Description
本発明では、必要に応じて湿熱処理工程が完了した切断物を、乾燥工程に付してもよい。ここで、乾燥工程の種類は特に限定されず、即席麺の製造において一般的に使用されている乾燥処理を適用することができる。具体的には、フライ(油揚げ)乾燥処理のほか、熱風乾燥処理、真空凍結乾燥処理、マイクロ波乾燥、低温での送風乾燥といったノンフライ乾燥処理があげられる。このうち、熱風乾燥処理であることが好ましい。乾燥工程を経ることで、長期保存性を向上させることができる
まず、穀物風造粒物の形状に切出すための最適な切り刃について検討を行った。角刃、丸刃、包丁刃を組み合わせて用いて検討を行った。各切り刃の番手は9番とした。なお、評価は次の基準に従って判断した。結果を表〇に示す。
◎:短粒種米と非常によく似ている
〇:短粒種米に似ている
×:短粒種米に似ていない
試作条件としては表2の通りとした。
Claims (5)
- 穀物風粒状物の製造方法であって、
麺帯を第一切り刃で切出す第一切出し工程と、
前記第一切出し工程で切出した麺線を第二切り刃で切出す第二切出し工程と、
からなる穀物風粒状物の製造方法。 - 前記第一切り刃及び/又は第二切り刃が包丁刃である、請求項1記載の穀物風粒状物の製造方法。
- 前記第二切り刃のピッチが、前記切出した麺線の厚みよりも狭い、請求項1又は2に記載の穀物風粒状物の製造方法。
- 前記第一切出し工程で切出した麺線を直線状に伸ばし、90°水平回転させた後に第二切り出し工程を行う、請求項1乃至3のいずれか一項に記載の穀物風粒状物の製造方法。
- 請求項1乃至4のいずれかに記載の製造方法で製造された穀物風粒状物。
