Abstract
Description
本出願は、発明の名称が「GLYCOSIDE COMPOSITIONS」である2014年11月24日に出願された米国仮特許出願第62/083,651号の利益を主張し、その全体が参照として本明細書に援用されている。
本開示は、グリコシド組成物を含む甘味料組成物に関連する。本開示の甘味料組成物は、1種又は2種以上の充填剤などの他の成分を更に含み得る。本開示はまた、食品及び/又は飲料への甘味料組成物の組み込みに関連する。
上述したように、レバウジオシドA、レバウジオシドB、及び/又はレバウジオシドDと組み合わせたレバウジオシドMの特定の組成物は、レバウジオシドD単独又はレバウジオシドM単独よりも高い甘味力を有する組成物をもたらす。したがって、甘味料組成物においてこれらの組成物を利用することにより大幅にコストを削減することができると考えられる。
本開示のグリコシド組成物及び/又は甘味料組成物を、飲食品組成物内に組み込むことができる。したがって、本開示はまた、本開示のグリコシド組成物及び/又は甘味料組成物を含む食品組成物及び飲料組成物についても企図する。
本開示はまた、グリコシド組成物及び甘味料組成物の製造方法にも企図する。典型的な従来のステビア系甘味料は、グリコシド組成物を含み、このグリコシド組成物は、主にレバウジオシドA(例えば、80%超のレバウジオシドA、95%超のレバウジオシドA、又は97%超のレバウジオシドA)からなる。本開示は、レバウジオシドB、レバウジオシドD、及びレバウジオシドMをかかる従来の甘味料に添加することを企図する。いくつかの実施形態において、レバウジオシドB、レバウジオシドD、及びレバウジオシドMのいずれかをかかる甘味料に添加して、所望のグリコシド組成比を得ることができる。
Claims (41)
- グリコシド組成物を含む甘味料組成物であって、該グリコシド組成物は、約1〜15%のレバウジオシドAと、約4〜20%のレバウジオシドBと、約3〜45%のレバウジオシドDと、約35〜81%のレバウジオシドMと、を含む、甘味料組成物。
- 5〜10%のレバウジオシドAを含む、請求項1に記載の甘味料組成物。
- 4〜20%のレバウジオシドBを含む、請求項1又は2に記載の甘味料組成物。
- 8〜15%のレバウジオシドBを含む、請求項1又は2に記載の甘味料組成物。
- 10〜12%のレバウジオシドBを含む、請求項1又は2に記載の甘味料組成物。
- 8〜40%のレバウジオシドDを含む、請求項1〜5のいずれか一項に記載の甘味料組成物。
- 12〜35%のレバウジオシドDを含む、請求項1〜5のいずれか一項に記載の甘味料組成物。
- 17〜30%のレバウジオシドDを含む、請求項1〜5のいずれか一項に記載の甘味料組成物。
- 22〜26%のレバウジオシドDを含む、請求項1〜5のいずれか一項に記載の甘味料組成物。
- 10〜75%のレバウジオシドMを含む、請求項1〜9のいずれか一項に記載の甘味料組成物。
- 35〜70%のレバウジオシドMを含む、請求項1〜9のいずれか一項に記載の甘味料組成物。
- 40〜65%のレバウジオシドMを含む、請求項1〜9のいずれか一項に記載の甘味料組成物。
- 45〜60%のレバウジオシドMを含む、請求項1〜9のいずれか一項に記載の甘味料組成物。
- 50〜55%のレバウジオシドMを含む、請求項1〜9のいずれか一項に記載の甘味料組成物。
- 前記グリコシド組成物は、前記甘味料組成物において、7.2より大きいSEVを提供する、請求項1〜14のいずれか一項に記載の組成物。
- レバウジオシドA、レバウジオシドB、レバウジオシドD、及びレバウジオシドMの量は、300〜500ppmである、請求項1〜15のいずれか一項に記載の甘味料組成物。
- pHは約2〜7である、請求項1〜16のいずれか一項に記載の甘味料組成物。
- グリコシド組成物を含む甘味料組成物であって、該グリコシド組成物は、約1〜18%のレバウジオシドAと、約4〜25%のレバウジオシドBと、約3〜40%のレバウジオシドDと、約30〜81%のレバウジオシドMと、を含む、甘味料組成物。
- 5〜15%のレバウジオシドAを含む、請求項18に記載の甘味料組成物。
- 8〜12%のレバウジオシドAを含む、請求項18に記載の甘味料組成物。
- 5〜20%のレバウジオシドBを含む、請求項18〜20のいずれか一項に記載の甘味料組成物。
- 8〜12%のレバウジオシドBを含む、請求項18〜20のいずれか一項に記載の甘味料組成物。
- 10〜35%のレバウジオシドDを含む、請求項18〜22のいずれか一項に記載の甘味料組成物。
- 15〜30%のレバウジオシドDを含む、請求項18〜22のいずれか一項に記載の甘味料組成物。
- 20〜25%のレバウジオシドDを含む、請求項18〜22のいずれか一項に記載の甘味料組成物。
- 35〜75%のレバウジオシドMを含む、請求項18〜25のいずれか一項に記載の甘味料組成物。
- 40〜70%のレバウジオシドMを含む、請求項18〜25のいずれか一項に記載の甘味料組成物。
- 45〜65%のレバウジオシドMを含む、請求項18〜25のいずれか一項に記載の甘味料組成物。
- 50〜60%のレバウジオシドMを含む、請求項18〜25のいずれか一項に記載の甘味料組成物。
- 53〜58%のレバウジオシドMを含む、請求項18〜25のいずれか一項に記載の甘味料組成物。
- 前記グリコシド組成物は、前記甘味料組成物において、7.2より大きいSEVを提供する、請求項18〜30のいずれか一項に記載の甘味料組成物。
- レバウジオシドA、レバウジオシドB、レバウジオシドD、及びレバウジオシドMの量は、500〜700ppmである、請求項18〜31のいずれか一項に記載の甘味料組成物。
- 充填剤を更に含む、請求項1〜32のいずれか一項に記載の甘味料組成物。
- エリスリトールを更に含む、請求項1〜33のいずれか一項に記載の甘味料組成物。
- イヌリンを更に含む、請求項1〜34のいずれか一項に記載の甘味料組成物。
- 請求項1〜35のいずれか一項に記載の甘味料組成物を含む食品組成物。
- 請求項1〜35のいずれか一項に記載の甘味料組成物を含む飲料組成物。
- (Reb ABDM組成物中のReb DとReb Mを合わせた合計の)10%〜50%のReb Dと、50%〜90%のReb Mと、を含む、Reb ABDM組成物であって、Reb D及びReb Mの組み合わせは、該Reb ABDM組成物の少なくとも80%を占める、Reb ABDM組成物。
- (前記Reb ABDM組成物中のReb DとReb Mを合わせた合計の)38%〜50%のReb Dと、50%〜63%のReb Mと、を含む、請求項38に記載のReb ABDM組成物。
- (Reb ABDM組成物中のReb DとReb Mを合わせた合計の)18%〜40%のReb Dと、60%〜82%のReb Mと、を含む、Reb ABDM組成物であって、Reb D及びReb Mの組み合わせは、該Reb ABDM組成物の少なくとも80%を占める、Reb ABDM組成物。
