Description
本明細書に説明する封入香味は、固体又は液体として源を発し、かつ水又は有機溶剤に可溶性とすることができる。好ましくは、固形香味粒子は、液体香味の析出又は液体香味の乾燥によって得ることができる。既に固体状態で供給された場合、固形香味は、封入する前に適切に調製することができる。
固形香味粒子が得られ、かつ任意的に疎水性コーティングで被覆された状態で、それは、第1のポリマーコーティングで被覆することができる。
第2のポリマーコーティング材料は、第1のコーティングの少なくとも一部分、好ましくはその全ての上に吸着され、第2のコーティング材料は、イオン性、両性イオン性、又は中性とすることができる。より詳細には、第2のポリマーコーティング材料は、好ましくは、陰イオン性、両性イオン性、又は中性の多糖類たんぱく質(加水分解物を含む)、多糖類の混合物、又は1つ又はそれよりも多くの多糖類及び1つ又はそれよりも多くのたんぱく質の混合物を含む。第2のポリマーコーティング材料は、約5Kダルトンと約1,000Kダルトンの間、好ましくは、約100Kダルトンと約500Kダルトンの間、より好ましくは、約200Kダルトンと約500Kダルトンの間の分子量を有することができる。
2つよりも多くのポリマーコーティングで被覆された固形香味粒子を含有する第3の混合物を形成するために、液体媒質に陽イオン性たんぱく質又は陽イオン性又は非イオン性多糖類を追加することにより、2回被覆粒子に付加的なコーティングを追加することができる。あらゆるその後のポリマーコーティングは、第1又は第2のコーティング材料に使用された材料のいずれか又はそれらの混合物とすることができ、第1及び第2のコーティングを形成するための本明細書に説明する方法は、付加的なコーティングを有する粒子を調製するのに使用することができる。例えば、第3のポリマーコーティングは、第3のポリマーコーティング材料が第2のコーティング材料の表面の少なくとも一部分に吸着するように、乾燥前に液体媒質に第3のポリマーコーティング材料を添加することによって追加することができる。望ましいコーティングが適用された後に、被覆された粒子は、好ましくは、水の重量比で15%よりも低い水分含有率まで、又は必要に応じて、水の重量比で約2と約5%の間の水分含有率まで乾燥することができる。
被覆固形香味粒子の調製では、第1及び/又は第2のポリマーコーティングにおけるゲル形成の誘導は、pHの調節することにより、及び/又は(i)第2のポリマーコーティング材料の付加中又は付加後に液体媒質に1価、2価、又は3価の陽イオンを追加し、(ii)第3の混合物を約60℃と約90℃の間の温度まで約1〜3時間にわたって加熱し、(iii)第3の混合物を約20℃と約0℃の間の温度まで約1から約48時間にわたって冷却し、(iv)噴霧乾燥によって第3の混合物から液体媒質の少なくとも一部を除去し、(v)凍結乾燥によって第3の混合物から液体媒質の少なくとも一部を除去し、又は(vi)(i)から(v)の2つ又はそれよりも多くを組み合わせることによって達成することができる。
噴霧乾燥が利用される場合、被覆粒子の懸濁液は、例えば、液体給送部からスプレーの液滴に噴霧化され、そこで、液滴が乾燥空気と接触するように配置されて乾燥被覆固形香味粒子を形成することができる。噴霧乾燥の代替として、約90℃から約95℃で被覆固形香味粒子がトンネルドライヤーを通過して大部分の液体を蒸発させ、次に室温で空気乾燥して最終の粉体を形成することができる。噴霧乾燥に対する別の代替案として、被覆固形香味粒子は、凍結乾燥させることができる。
被覆粒子は、(a)乾燥重量比で約10%から約90%の固形香味粒子、重量比で約20%から約1%の第1のポリマーコーティング材料、及び重量比で約50%から約5%の第2のポリマーコーティング材料、又は(b)乾燥重量比で約20%から約80%の固形香味粒子、重量比で約30%から約1%の第1のポリマーコーティング材料、及び重量比で約60%から約1%の第2のポリマーコーティング材料、又は(c)乾燥重量比で約40%から約70%の固形香味粒子、重量比で約15%から約5%の第1のポリマーコーティング材料、及び重量比で約40%から約15%の第2のポリマーコーティング材料を含むことができる。
被覆固形香味粒子を調製する特定的な実施形態では、結合する段階は、第1の液体媒質内の第1のポリマーコーティング材料の分散剤に固形香味粒子又は分散媒質中の固形香味粒子の分散剤のいずれかを追加し、第1の混合物を形成する段階を含む。分散媒質は、脱イオン水のような水溶性媒質とすることができる。
脱イオン化水に約0.5から約2%(w/w)のたんぱく質を含有する溶液が調製される。粉砕された固形香味粒子が、たんぱく質溶液内に分散される。使用されるたんぱく質に応じて、クエン酸を用いて約3.5から約6の範囲にpHが調節される。粉末又は溶液形態の混合物に選択された第2のポリマーコーティング材料が付加されて完全に混合される。使用されるたんぱく質に応じて、得られる混合物が約70℃から約80℃で約1から2時間にわたって加熱される。炭水化物層の適切なゲル化のために加熱された混合物に塩を追加することができる。塩は、好ましくは、カラゲナンに基づいてコアセルベートに付加されるが、ペクチンベースのコアセルベートゲルは、付加的な塩を必要とするか又は必要としない。適切な塩は、使用される炭水化物の種類次第でKC1、KC1と乳酸カルシウムの混合物、又は単なる乳酸カルシウムを含むことができる。塩化カルシウム、クエン酸塩カルシウム(マグネシウム塩を含む)のような2価金属の他の塩を同様に使用することができる。コアセルベートゲルは、好ましくは、噴霧乾燥させる前に約12から約48時間にわたって冷却される。
Claims (15)
- 固形香味粒子を含む基本粒子と、
前記基本粒子を少なくとも部分的に被覆し、たんぱく質、陽イオン性多糖類又はオリゴ糖類、非イオン性多糖類又はオリゴ糖類、又はそれらの混合物から構成される群から選択される第1のポリマーコーティング材料と、
前記第1のコーティングを少なくとも部分的に被覆し、多糖類、たんぱく質、多糖類の混合物、たんぱく質の混合物、又は多糖類とたんぱく質の混合物から選択される第2のポリマーコーティング材料と、
を含むことを特徴とする被覆固形香味粒子。 - 前記固形香味粒子は、疎水性コーティングを用いて被覆されることを特徴とする請求項1に記載の被覆粒子。
- 前記第2のポリマーコーティング材料は、陰イオン性、両性イオン性、又は中性であることを特徴とする請求項1又は請求項2に記載の被覆粒子。
- 前記第2のポリマーコーティング材料は、カリウム、カルシウム、マグネシウム、鉄、又はその組合せを含む1価、2価、又は3価の陽イオン、又は塩化物、クエン酸塩、乳酸塩、酢酸塩、又はその組合せを含む陰イオンを更に含むことを特徴とする請求項1から請求項3のいずれか1項に記載の被覆粒子。
- 約−5mVと約−60mVの間のゼータ電位値を有することを特徴とする請求項1から請求項4のいずれか1項に記載の被覆粒子。
- 前記第1のポリマーコーティング材料は、約2Kダルトンと約1000Kダルトンの間の分子量を有することを特徴とする請求項1から請求項5のいずれか1項に記載の被覆粒子。
- 前記第2のポリマーコーティング材料は、約5Kダルトンと約1,000Kダルトンの間の分子量を有することを特徴とする請求項1から請求項6のいずれか1項に記載の被覆粒子。
- 約0.20ミクロンから約2000ミクロンのサイズを有することを特徴とする請求項1から請求項7のいずれか1項に記載の被覆粒子。
- 前記基本粒子は、約1000ミクロンよりも小さい断面を有することを特徴とする請求項1から請求項8のいずれか1項に記載の被覆粒子。
- (a)乾燥重量比で約10から約90%の量の固形香味粒子、
(b)乾燥重量比で約20%から約1%の量の第1のポリマーコーティング、及び
(c)乾燥重量比で約50%から約5%の量の第2のポリマーコーティング材料、
を含むことを特徴とする請求項1から請求項9のいずれか1項に記載の被覆粒子。 - 前記被覆された基本粒子は、重量比で約15%よりも少ない水分含有率を有することを特徴とする請求項1から請求項10のいずれか1項に記載の被覆粒子。
- 正味の負又は中性の電荷を有することを特徴とする請求項1から請求項11のいずれか1項に記載の被覆粒子。
- 熱重量分析によって測定すると250℃に加熱された時に重量の20%未満の減少を呈することを特徴とする請求項1から請求項12のいずれか1項に記載の被覆粒子。
- 味の良い又は食べられる製品であって、
請求項1から請求項13のいずれか1項に記載の1つ又はそれよりも多くの被覆粒子、
を含むことを特徴とする製品。 - 請求項1から請求項14のいずれか1項に記載の被覆固形香味粒子を調製する方法であって、
固形香味粒子と第1のポリマーコーティング材料を液体媒質中で結合し、該第1のポリマーコーティング材料が、該粒子の面の少なくとも一部分上に吸着して第1の層を形成する段階と、
第2のポリマーコーティング材料を前記液体媒質と混合し、該第2のポリマーコーティング材料が、前記第1の層の面の少なくとも一部分上に吸着して第2の層を形成する段階と、
前記粒子を噴霧乾燥して被覆固形香味粒子を形成する段階と、
を含むことを特徴とする方法。
