Abstract
A találmány tárgyát hidrőgénezett zsírtól mentes étkezési növényizsírkőmpőzíció képezi, amelyben - a sztearinsav maradéktartalőm 15-45%, - a palmitinsav maradéktartalőm 15%-nál kevesebb, - a 18szénatőmős telítetlen zsírsav maradéktartalőm 45-85%, - a 16szénatőmős vagy ennél több szénatőmős zsírsavmaradékők összmennyiségelegalább 95%, - a (HOH + HHO) triglicerideknek a (HLH + HHL)trigliceridekhez viszőnyítőtt aránya 1,0-nél kisebb. A találmányszerinti zsírkőmpőzícióban a trigliceridek 2-es helyzetében lévőzsírsavmaradékők 5-45%-a telített zsírsavmaradék és 95-55%-atelítetlen zsírsavmaradék. A találmány tárgyáhőz tartőzik ezenzsírkőmpőzíciók előállítására szőlgáló eljárás is. A találmányszerinti eljárást őly módőn végzik, hőgy A legalább 15% sztearinsavmaradéktartalmú, 15%-nál kevesebb palmitinsav maradék, valamintlegalább 30% telítetlen 18 szénatőmős zsírsav maradéktartalmú nemhidrőgénezett növényi zsírt átészterezésnek vetnek alá, amelyben agliceridek mindhárőm helyzete részt vesz, majd B az így kapőttátészterezett zsírból adőtt esetben 10-100%-őt legfeljebb 90% nemhidrőgénezett növényi zsírral elegyítik. A találmány tárgyát képezitővábbá őlyan képlékeny étkezési zsírtermék is, amelyben legalább egyőlyan zsírfázis van jelen, amely a találmány szerinti zsírkőmpőzícióttartalmazza. ŕThe subject of the invention is an edible vegetable tallow composition free of hydrogenated fat, in which - stearic acid residual content is 15-45%, - palmitic acid residual content is less than 15%, - 18-carbon unsaturated fatty acid residual content is 45-85%, - fatty acid residues with 16 carbon atoms or more are at least 95%, - the ratio of (HOH + HHO) triglycerides to (HLH + HHL) triglycerides is less than 1.0. In the fatty stone composition according to the invention, 5-45% of the fatty acid residues in position 2 of the triglycerides are saturated fatty acid residues and 95-55% are unsaturated fatty acid residues. The subject of the invention also includes a vining process for the production of grease stone compositions. The process according to the invention is carried out in the following way: A unhydrogenated vegetable fat with at least 15% stearic acid residue, less than 15% palmitic acid residue, and at least 30% unsaturated 18-carbon fatty acid residue is subjected to transesterification, in which all three positions of aglycerides are involved, and then B from the transesterified fat where appropriate, 10-100% of it is mixed with up to 90% non-hydrogenated vegetable fat. The subject of the invention is also a highly plastic edible fat product in which at least one fat phase is present, which contains the fat stone composition according to the invention. ŕ
