Abstract
The invention comprises a glyceride oil composition, comprising mixed triglycerides of (a) acetic, propionic, butyric or caproic acid, or mixtures thereof, and either (b) one or more fatty acids containing 8-24 carbon atoms derived from animal fats, from marine oils and from vegetable oils of the oleic-linoleic or linolenic acid groups, and hydrogenated products thereof, such fats and oils and hydrogenation products having an iodine value above 80, the molar ratio of (a) to (b) being 1/4 -\ba2/1 , or (c) fatty acids containing 8-24 carbon atoms derived from a vegetable oil of the lauric acid group, the molar ratio of (a) to (c) being 1/1 -\ba2/1 , or a mixture of both (b) and (c), the composition always being substantially free of triglycerides wholly of acids listed under (a), which may be made by interesterifying the appropriate fat or oil, preferably cottonseed, peanut, or coconut oil, with triacetin, tripropionin, tributyrin or tricaproin, or mixtures thereof, or with similar mixed lower triglycerides, in the presence of a catalyst such as sodium methoxide, by itself or suspended in xylene, sodium-potassium alloy, or sodium metal. Other catalysts are mentioned in U.S.A. Specification 2,614,937. After random interesterification is complete the catalyst is inactivated by acidulation or by addition of water, any unreacted lower triglyceride being thereafter removed by steam distillation. It is preferred that 5-25 per cent by weight of the total acids present be acetic acid when acids (b) are present, and 25-30 per cent when acids (c) are present Examples describe the interesterification of triacetin, tripropionin or tributyrin with partially hydrogenated or bleached cottonseed oil, bleached soya oil or coconut oil. Specifications 160,840, [Class 2 (iii)], and 816,344 also are referred to.ALSO:A glyceride oil composition, suitable for incorporation with vinegar, salt, and whole eggs or egg yolks in a mayonnaise, comprises mixed triglycerides of (a) acetic, propionic, butyric or caproic acid, or mixtures thereof, and either (b) one or more fatty acids containing 8-24 carbon atoms derived from animal fats, from marine oils, and from vegetable oils of the oleic-linoleic or linolenic acid groups, and hydrogenated products thereof, such fats and oils and hydrogenation products having an iodine value above 80, the molar ratio of (a) to (b) being 1/4-2/1, or (c) fatty acids containing 8-24 carbon atoms derived from a vegetable oil of the lauric acid group, the molar ratio of (a) to (c) being 1/1-2/1, or a mixture of both (b) and (c), the composition always being substantially free of triglycerides wholly of acids listed under (a). It is preferred that 5-25 per cent by weight of the total acids present be acetic acid when acids (b) are present, and 25-30 per cent when acids (c) are present. Antioxidants, such as the tocopherols, butylated hydroxyanisole and propyl gallate, and crystallization inhibitors, such as lecithin and oxidized ("blown") oils, may be added to the compositions. Specification 160,840, [Class 84], 816,344 and U.S.A. Specification 2,614,937 are referred to.
