Abstract
Hams and other meat are preserved by injecting pickle under pressure through hollow needles into the meat and placing it in pickle in a vessel from which the air &c. is then exhausted, the meat being kept in the chamber under vacuum for a period of time, e.g. 15 minutes, sufficient to complete the pickling. The meat may be placed in a weighing machine during the injection to indicate when the required amount of pickle has been added. The meat may be subjected to vacuum prior to the injection.
