[Class 49.] Apparatus for pasteurizing liquids in containers by immersion in water or other liquid comprises pasteurizing chambers in the form of trays 10, Fig. 3, arranged in two or more tiers on a rack 21 so that at least one tray of each tier is placed simultaneously into communication with a common water supply main 20 and a common drain 37. Water at predetermined temperature flows evenly distributed through each tray, entering from the main 20 through a control valve and a multi-jet or slotted pipe 17 an inflow chamber B and passing therefrom to the pasteurizing chamber D and thence over a weir 15, which is adjustable in height, to the outflow chamber C which has an outlet 16 registering with a mouth 39 on the drain 37. The water is supplied from a tank 23 initially filled through a ball-controlled water inlet 32 and has a steam heating coil 34. The outflow water passes from the drain 37 to a trough 38 from which it is returned by a pump 40 through a pipe 33 to the tank 23 which it enters through upper and lower inlets to maintain an even temperature therein. The tank 23 may have an additional cold water supply or a brine-circulating coil to cool the water gradually for cooling the containers after pasteurization. The trays 10 are slid in and out of the rack 21 on rollers 25 and a portable loading platform the floor of which is formed by rollers 30 can be attached to the rack by engagement with projections 27 thereon. In a modification, Figs. 4 and 5, the trays 10 are carried in two tiers on a circular rack 43 which has wheels 44 enabling it to be rotated on circular rails 45. Water is supplied to the trays from pipes 46a .. 46f as they rotate, the temperature thereof rising from warm, from pipe 46a, to pasteurizing, from pipe 46c, and then falling to normal or chilling, from pipe 46f. Troughs 47 collect the outflow from the trays 10. Plates 53 bridge the gaps between the trays under the water supply pipes. Loading and unloading platforms 49 are provided. Modifications employ one supply pipe only, or all the pipes supplying heated water at a uniform temperature, and a common outlet trough.
