Abstract

A blocking tool for making pastry products comprises a sleeve 2 surrounding a central core 1 made of plastics material and including air passages therethrough. A mushroom valve 6 and air ducts in core 1 when supplied with air, provide release means for releasing a product. Those means combined with the material of the sleeve and core enable conventional electrical heaters in the tool to be dispensed with thus enhancing operation and reducing maintenance. <IMAGE>

Description

A BLOCKING TOOL The present invention relates to a blocking tool for use in the production of food, particularly pastry products.
In the mass production of pastry products, such as pies a measured quantity of dough is deposited in the pie container. The container is then indexed forward to a position underneath a blocking tool which decends into the dough and forms it substantially to the shape of the container to form the base of the pie. To promote the release of the formed dough the blocking tool, which is made of metal, is heated by electrical heating elements which extend into the mass of the metal. The provision of these heaters substantially increases the cost of the blocking tool, and lead to considerable maintenance problems and problems relating to the operation of the tool. In particular solidified food product may adhere to the tool which in turn leads to damage to subsequent production runs if the tool is not cleaned.
According to the present invention, there is provided a blocking tool comprising an inner core made of synthetic plastics material disposed within a sleeve, sealing means disposed between the core and the sleeve to inhibit the passage of air therebetween, and air passages leading through the core.
As a release, additional to that provided by air passing through the ducts, a valve may also be incorporated in the core. The valve may be a mushroom valve. The synthetic plastics material may be food quality high density acetal or polyethylene.
In order that the invention may be more clearly understood, one embodiment thereof will now be described, by way of example, with reference to the accompanying drawings, in which: Figure 1 shows a cross sectional view of a blocking tool for producing a pie base, Figure 2 shows an underplan view of a blocking tool for producing a pie lid for the pie base of Figure 1, Figure 2a shows a cross-sectional view along the section line A-A of Figure 2, Figure 2b shows a cross-sectional view along the section line B-B of Figure 2, Figure 2c shows a stem forming part of the tool of Figure 2, and Figure 2d is an assembled view in section and side elevation of the tool of Figure 2c.
Referring to Figure 1 of the drawings, the blocking tool comprises a central core 1 which is concentrically surrounded by a pastry cutting sleeve 2 spring loaded by spring 2a. Both core 1 and sleeve 2 are made from a high density food quality synthetic plastics material such as polyethylene or acetal. The central core is connected to a stem 3. This is made from stainless steel but could also, if required, be made from the same material as the core 2.
The stem is connected to the core by bolts 4 which extend through a flange 5 in the bottom of the stem. This flange is disposed in a recess formed in the upper surface of the core.
A "mushroom" valve 6 is housed within the core and the stem. This valve comprises a spring loaded valve member 7, which when operated, extends out of the core. An air passage 9 extends through the stem and communicates with a bore 10 in which the valve is partly disposed. A groove 11 is formed in the exterior surface of the core in which an '0' ring 12 is disposed.
In use an amount of pastry is extruded into a container and the blocking tool is lowered to form this pastry to the shape of the container. The sleeve cuts off any surplus pastry overlapping the edge of the container whilst the core 1 form the base and wall. To assist in separation of the blocking tool from the formed dough, air is admitted to the "mushroom valve" to open the valve and supply air between the base of the tool core and the pastry. Air leakage is prevented or restricted by the '0' ring 12 and thereby confined to the space between tool core and pastry. Any air escaping is vented by vent 13. As the tool is raised the pastry is released thereby remaining in the container. The core, as compared with conventional metal tools, is unheated and any tendency for food product to become burnt on the tool is eliminated.
Figures 2, 2a, 2b, 2c and 2d show a blocking tool for manufacturing a lid for the pastry base manufactured by the blocking tool of Figure 1. This lid blocking tool comprises a central core 14 concentrically surrounded by an outer sleeve 15. Both the core 14 and sleeve 15 are made from a high density good quality synthetic plastis material such as polyethylene or acetal. The central core 14 comprises an annular extension 16 which defines a shallow cylindrical recess 17. The lower face of this extension 16 is crimped to produce the crimped pie edge in use. A substantially cylindrical stainless steel support stem 21 is connected to the core 14 by means of bolts (not shown) extending through holes 18 in a flange 19 on the stem into screwthreaded bores 20 in the core. The stem 21 defines an air duct 22 which leads to a chamber 23 which communicates with air ducts 24 in the core 14.In use, the blocking tool decends to form the lid from an extruded layer of pastry or individually.
The lid so formed is then blown off by supplying air to recess 17 through ducts 24. An '0' ring seal 24 contained in groove 25 formed in the surface of core 14 prevents or restricts air escaping upwards. Any air which does escape is vented via vent 26. The sleeve 15 acts to separate the lid from the remainder of the layer or from any excess material (where there is no layer). As with the base blocking tool there are no heaters. This is particularly advantageous with the lid tool since this tool may come into contact with pie filling where, as a result of malfunction, a lid is missing. In such circumstances, with a heated tool, filling is often burnt onto the tool.
It will be appreciated that the above embodiment has been described by way of example only and that many variations are possible without departing from the invention.

Claims (10)

1. A blocking tool comprising an inner core made of synthetic plastics material disposed within a sleeve, sealing means disposed between the core and the sleeve to inhibit the passage of air therebetween, and air passages leading through the core.
2. A blocking tool as claimed in claim 1, in which a valve is incorporated in the core as an additional release means to that provided by air passing through the air passages.
3. A blocking tool as claimed in claim 2, in which the valve is a mushroom valve.
4. A blocking tool as claimed in claim 3, in which an air passage leads through the core to the mushroom valve to provide for the supply of air thereto to operate the valve and the sealing means operate to restrict passage of air so supplied between the core and the sleeve.
5. A blocking tool as claimed in claim 4, in which the sealing means comprises an 0 ring disposed in a groove around the core.
6. A blocking tool as claimed in any preceding claim, in which the synthetic plastics material is polyethylene.
7. A blocking tool as claimed in any of claims 1 to 5, in which the synthetic plastics material is acetal.
8. A blocking tool as claimed in any preceding claim, in which the synthetic plastics material is polyethylene.
9. A blocking tool as claimed in any preceding claim, in which the sleeve is made from the same material as the core.
10. Ablocking tool substantially as hereinbefore described with reference to the accompanying drawings.
