Abstract
1291056 Coffee compositions GENERAL FOODS Ltd 21 Oct 1969 [21 Oct 1968] 49937/68 Heading A2B A process of producing an aqueous coffee composition which contains at least two different species of coffee solids and which may be subsequently dried comprises (a) producing an aqueous extract containing one species of coffee solids in a higher proportion than that species is desired in the final aqueous composition from roasted ground coffee (b) separately producing a more concentrated extract containing another species of coffee solids in a higher proportion than that species is desired in the final aqueous composition, by extracting roasted ground coffee with water and concentrating the resultant extract and (c) uniformly mixing the extracts formed in steps (a) and (b). The product of step (c) may be freeze dried or spray dried. The extract formed in step (a) may contain coffee solids rich in aroma-imparting ingredients (e.g. Arabica coffee solids) and the extract formed in step (b) less desirable coffee solids (e.g. Robusta coffee solids). In the production of the extract of step (a) volatile components may be steam distilled from roasted ground coffee prior to extraction thereof with water. The volatile acids may be separated from the other volatile components the latter being subsequently combined with the extract.
