Abstract
A water-in-oil emulsion is prepared by blending together 4.7-98.2% of a liquefied edible fat with 1.0-10.0% of a liquefied edible wax and 1.0-12.0% of a combination of emulsifiers consisting of 0-75.0% of an edible, non-ionic, hydrophilic emulsifier and 100-25.0% of an edible, non-ionic, hydrophilic emulsifier having an iodine value of at least 8, the total hydrophilic-lipophilic balance of the emulsifier combination being 3-6, and adding the blend 1.8-74.0% of water while agitating at a rate to maintain homogeneity of the mixture. Preferably the water is at the temperature of the blend, and may contain up to 83.0% sugar. Up to 30% of the lipophilic emulsifier may be replaced by a lipophilic thinner having a hydrophilic-lopophilic balance of not more than 5.8 and an iodine value below 8. Flavourings and colourings which are soluble or dispersible in fat or water may also be added. In examples, the product was lemon-flavoured and used to enrobe ice-cream.ALSO:Ice cream bars may be coated with a lemon coloured and flavoured water-in-oil emulsion is prepared by blending together 4.7-98.2% of a liquified edible fat with 1.0-10.0% of a liquified edible wax and 1.0-12.0% of a combination of emulsifiers consisting of 0-75.0% of an edible, non-ionic, hydrophilic emulsifier and 100-25.0% of an edible, non-ionic, hydrophilic emulsifier having a iodine value of at least 8, the total hydrophilic-lipophilic balance of the emulsifier combination being 3-6, and adding the blend 1.8-74.0% of water while agitating at a rate of maintain homogeneity of the mixture.
