A method of preparing quick cooking grains, e.g. rice, seeds and farinaceous foods, e.g. spaghetti, having a starch content greater than 50% comprises impregnating t he foodstuff with an aqueous solution of sodium chloride until a uniform penetration of the solution throughout the foodstuff is achieved. The impregnating solution may be hot and may contain preservatives (e.g. benzoic acid, sorbic acid, sulphur dioxide), flavourings, colourings, minerals and vitamins. The impregnated food may have its surface moisture removed and it may be gelatinized, pasteurized, dehydrated, packed in polyethylene or paper under vacuum, and/or held in cold or warm storage.
