Abstract

Titre :  Procédé de production d’une boisson Procédé de fabrication d’une boisson non gazeuse selon lequel on injecte dans la boisson, au cours de la fabrication, un gaz de traitement constitué de CO2 ou de N2O ou d’un mélange CO2 / N2O, éventuellement additionné d’un gaz à faible solubilité dans un liquide tel que l’azote, la boisson étant conditionnée en fin de ligne dans un récipient, ladite injection permettant, à l’ouverture du récipient, de réaliser la désorption du gaz injecté dissous et l’entrainement par le gaz désorbé de composés d’arômes de la phase liquide de la boisson vers la phase gazeuse au dessus de la phase liquide (espace de tête), permettant de renforcer la perception aromatique olfactive à l’ouverture du récipient.
