Abstract

Beta-galactosidase is obtained by culture of a microorganism belonging to the taxonomic group represented by the standard culture NRLL B-11, 229. The enzyme isolated from microbial cells resists heat and inhibition by lactose and its hydrolysis products, so that it can be advantageously used to convert whey for example into a syrup containing glucose and galactose.
