Abstract

The rate at which pressure is applied, the duration for which pressure is maintained and the rate of decompression are dependant upon the nature of the prod. Compression and decompression can be continuous or in stages. A container of the prod. to be sterilised is immersed in liq. in a pressure vessle, which is sealed and a pump used to raise liq. pressure to the required level. Auto matically timed valves can be used to decompress the vessel by stages. The vessels can be arranged on a carousel or fixed in line. Biological sterilisation of food prods. partic. egg based prods. is possible, and is low cost without harming the foodstuffs.
