Abstract

Fish protein concentrates are made by enzymatic means using the proteolytic enzymes contained in the viscera of the fish. The fish and/or the viscera are mixed with water and rapidly heated to about 40 degrees C. The pH is adjusted to 4.5 and the temp. is slowly increased to at most 70 degrees C for sufficient time for a predetermined fraction of the fish to be dissolved. The liquid obtained is then sepd. to recover fish oils and fats, sediment composed of undissolved materials and non-digested protein, and a proteolysis juice rich in amino acids. The process is carried out in an agitated digester, a first centrifuge is used to separate the sediment, and a second centrifuge to separate the oils and fats. The installation also has an apparatus for reducing the w ater content of the juice product and another apparatus for treating the sediment. The product is used in human and animal food and in cosmetology. The process avoids destruction of vitamins and some of the amino acids by acid or water hydrolysis at about 100 degrees C.
