Abstract

Rice crackers are made by washing rice, treating the rice with steam and kneading, cooling the product, moulding it to a desired size, thickness and shape, drying the shaped material, baking or roasting it and then seasoning it with soya or salad oil and drying it. By cooling the rice clumps after conversion into alpha-starch in a chamber (and not in water), a very soft confection can be obtd.
