Abstract

Prepn. of cooked frozen paella in a receptacle with flat bottom and low height from rice and water, tomato, chicken and/or rabbit, saffron, salt, greens and opt. snails. The ingredients except rice are cooked over the flame of fire wood or in an industrial oven of fire wood. After 1 hr. the rice is added and the mixt. was cooked for 20-30 minutes, the receptacle being covered with aluminium foil during the first phase of cooking rice, followed by cooling for 2-4 hrs. to ambient temp. covering the receptacle with plastic film and ultra freezing to -18 deg.C.
