Abstract

This control process is characterized by: - controlling the kinetics of alcoholic fermentation from the fermentation rate, - conducting the fermentation process in such a way that it takes place at the maximum fermentation rate during the maximum period of time within maximum and minimum temperature limits. This process appreciably reduces the controlled fermentation time, reduces energy consumption and permits greater rationalization in the design and operation of the cooling system serving the fermentation.
