LA INVENCION PARTE DE UN METODO QUE CONTIENE UN MATERIAL VEGETAL CON CONTENIDO DE INULINA Y QUE SIRVE PARA LA ELABORACION DE UN PRODUCTO INULOOLIGOSACCHARID, QUE ES POBRE EN GLUCOSA, FRUCTOSE Y SACAROSA. ESTO SE CONSIGUE AL EXPONERSE EL MATERIAL VEGETAL, QUE CONTIENE INULINA, DIRECTAMENTE DESPUES DE LA DESINTEGRACION Y PASTERIZACION A UN TRATAMIENTO ENXIMATICO CON ENDO-INULINASE. ELIGIENDO LAS CONDICIONES DE PUESTA AL MINIMO DE LAS PARTES DE GLUCOSA, FRUCTOSE Y SACAROSA, ASI COMO SEPARANDO POR MEDIO DE UN ANALISIS POR ABSORCION CROMATOGRAFICA LAS GLUCOSAS Y FRUCTOSE QUE MOLESTA. LA SACAROSA PUEDE SEPARARSE AÑADIENDO .. CLUCOSIDASE, ESPECIALMENTE ANTES DEL ANALISIS POR ABSORCION CROMATOGRAFICA. LAS CONDICIONES ELEGIDAS PARA EL TRATAMIENTO ENZIMATICO SON: MANTENIMIENTO CONSTANTE DEL VALOR PH ENTRE 5,0 Y 5,6 A TEMPERATURAS ENTRE 50 HASTA 60 DE 1,8 A 2,4 DE UNIDADES ENCIMATICAS POR GRAMO DE INULINA A LA ENDO-INULINASE.
