Abstract
Description
The invention relates to a device for cutting mushrooms into slices, in particular fresh mushrooms.
So far, the housewife has sliced mushrooms almost exclusively with the kitchen knife, but the geometrically complicated shape, the inhomogeneous distribution of toughness and the brittleness of the mushroom require good skill if smooth mushroom slices are to be achieved. Numerous cutting devices are known which consist of two tongs arms which are articulated at their rear ends, can be gripped with one hand and can be compressed against a return spring, with a tongs arm at the front end carrying a cutting grid which is aligned with a receiving trough on the other tongs arm. These well-known Devices are suitable for cutting boiled eggs, jacket potatoes, beetroot and similar foods, but attempts to cut fresh mushrooms with these known devices only result in very irregularly shaped slices, the edges of which are often torn out or frayed, often with the slices also due to excessive crushing of the mushroom when cutting into many fragments. Better results can be obtained if you use a cutter with a flat cutting surface and place axially halved mushrooms with their smooth cut surface on the cutting surface and then cut the mushroom halves into a group of disks with the cutting grid. However, there are only halved mushroom slices, which is generally undesirable.
The invention has for its object to provide a device for cutting mushrooms into slices, especially fresh mushrooms, with which smooth slices can be cut from the full mushroom shape, the device should also be used for mushrooms of very different sizes.
To solve this problem, the invention provides that the cutting device consists of two articulated arms which are articulated at their rear end, can be gripped with one hand and can be compressed against a return spring, with a gun arm at the front end carrying a cutting grid which is aligned with a receiving trough on the other gun arm that the receiving trough is round, for receiving one on the mushroom standing upside down has a suitable trough shape, that the cutting grid consists of sharpened stainless steel knives and that both pliers arms have projecting grip projections at the front, on which the pliers arms can also be grasped and compressed with the second hand.
The possibility provided according to the invention of being able to apply the cutting pressure with both hands allows, on the one hand, very sensitive work and, on the other hand, also the cutting of relatively tough mushrooms. In the device according to the invention, the mushroom, upside down, is cut, so that the cutting grid first cuts into the mushroom stem, which has a relatively high toughness. In order to avoid excessive crushing or breakage of the mushroom, the mushroom head must lie fully in its central area on the trough bottom, which is why, according to a preferred embodiment of the invention, the receiving trough has a slightly curved, more than 2/3 of the diameter of the trough opening extending floor and only then has steep edges. The size and bulge of the trough-shaped receiving trough is chosen in accordance with the largest commercially available mushrooms, so that there is a perfect support of their central head area for the largest and also for all smaller mushrooms.
Only a few knives are used in the first cutting section, in which the mushroom stem is cut. According to a preferred embodiment of the invention, the cutting device has an odd number of knives, e.g. B. seven knives at a distance of about 5.5 millimeters. Since the mushrooms are normally placed in the center of the trough, mushroom stalks with a diameter of less than 11 to 12 millimeters are only divided by a single knife, so that unbroken mushroom slices of full mushroom shape are produced even with small mushrooms.
During the further cutting process, the knives penetrate into the mushroom head through the soft underside, the mushroom head now being pressed more or less tightly against the trough bottom, depending on its toughness, until the knives cut through the mushroom skin. So that the mushroom slices do not fray on their head-side edges, the invention provides that the knife receiving grooves of the receiving troughs are narrower than the intermediate mushroom support webs, each of which has a broad, upper side lying in the trough contour. The grooves are V-shaped in cross section, the side walls of the grooves each lying in one plane. As a result, the grooves in the central bottom area are very narrow, but so wide in the area of the edges that cleaning them is unproblematic.
The sliced mushroom slices must later be placed in a pan or other container, whereby they should be isolated, i.e. no more should stick to each other. In a further development, the invention provides that the knife edges are immersed in the grooves of the receiving troughs when the cutting frame strikes a limit stop, while the knife backs are still between the cut disks. As a result, the mushroom slices are still held on the cutting device after cutting, and by tilting the cutting device in the manner of a spoon, the mushroom slices can be transferred directly into a pan or the like, the disk pack now bursting apart and the slices occasionally falling into the pan or the like .
The aforementioned limit stop also ensures that the knife edges themselves do not hit the wall of the receiving trough, thus preventing the knives from becoming prematurely blunt. Practical tests have shown that the use of very sharp knives is very important for the present application.
In the cutting device according to the invention it is provided in a further embodiment that the cutting grid frame has a round frame part which, when the device is closed, encloses the receiving trough, on the rear arch region of which the knives are each fastened with one end, that the knives with their front end on the underside of the approximately cutting grid-wide grip projection are fastened, an arch-shaped bead approximately parallel to the rear arch region being advantageously formed on the underside of the grip projection, in which the front knife ends sit and which is aligned with a counter stop on the top of the handle projection of the other pliers arm. With such a design, knives of the same length can be used, which results in considerable rationalization of the manufacturing costs.
Finally, according to the invention, it can also be provided that the receiving trough is formed in a frustoconical base body, which sits with its larger base surface on the essentially straight gun arm. With such a design, the device can also be placed on a table with its receiving-arm side and handled as a table-top device if particularly tough material to be cut is to be processed.
