Abstract

UNA BEBIDA ALCOHÓLICA QUE SE AÑEJA EN UN BARRIL DE MADERA LUEGO DE RECUBRIR EL BARRIL CON UNA PELÍCULA QUE TIENE UNA VELOCIDAD DE TRANSMISIÓN DEL OXÍGENO DE POR LO MENOS 50 CC/M2/DÍA Y UNA VELOCIDAD DE TRANSMISIÓN DEL ETANOL MENOR DE 30 G/M2/DÍA. LA BEBIDA ADQUIERE UNO O MÁS COMPONENTES DE SABOR ESPECÍFICOS EN UNA CANTIDAD DE 50%, 75%, O 100% CON RELACIÓN A LAS CANTIDADES DE UNO O MÁS DE LOS MISMOS COMPONENTES DE SABOR EN UNA BEBIDA ALCOHÓLICA DE CONTROL AÑEJADA EN UN BARRIL DE MADERA SIN LA PELÍCULA SOBRE EL MISMO. AL CUBRIR EL BARRIL CON LA PELÍCULA SE REDUCE LA PÉRDIDA POR EVAPORACIÓN DENOMINADA PORCIÓN DE LOS ÁNGELES, A LA VEZ QUE SE PERMITE QUE LA BEBIDA DESARROLLE COMPONENTES DE SABOR DESEABLES DURANTE EL AÑEJAMIENTO.
