Abstract
La presente invención se refiere a un auxiliar de cocción estable al almacenamiento para recubrir y freír un producto alimenticio en una etapa, por ejemplo, en una sartén caliente; el auxiliar de cocción comprende de 3-28 % en peso de aceite, de 20-60 % en peso de agua, de 2,3-5,5 % en peso de almidón modificado, de 3-15 % en peso de sal, de 0,5-30 % en peso de azúcar y de 0,5-30 % en peso de saborizantes y en donde el auxiliar de cocción tiene una viscosidad en el intervalo de 8 a 60 Pa.s a una velocidad de cizallamiento de 1 s-1 a 25 °C, y el aceite y el agua están en forma de una emulsión. Otros aspectos de la invención son el método para preparar dicho auxiliar de cocción, así como también un método para recubrir y freír un producto alimenticio en una sartén o superficie calientes.
