技术领域
本发明涉及胡萝卜汁加工的技术领域,特别是涉及一种浓缩胡萝卜清汁加工工艺。
背景技术
众所周知,胡萝卜汁是用新鲜胡萝卜为主要原料压榨而成的一种蔬菜汁。胡萝卜中富含胡萝卜素等多种营养物质,具有明目、美容、增强免疫力等多种功效。
现在市场上的浓缩胡萝卜汁多为浊汁;按其他浓缩果蔬汁工艺生产的浓缩胡萝卜清汁易产生沉淀。
发明内容
为解决上述技术问题,本发明提供一种浓缩胡萝卜清汁加工工艺,流程简单,能耗低,制得的胡萝卜清汁可以应用到澄清型果蔬汁饮料,带入胡萝卜特有香气而不会影响终产品的澄清度。
本发明的一种浓缩胡萝卜清汁加工工艺,包括以下步骤:
S1、原料清洗修整:去除胡萝卜表面的泥沙、杂草等;
S2、切分预煮:利用切菜机将胡萝卜分切成块状,利用螺旋预煮机对胡萝卜进行预煮软化,同时添加4-8‰的柠檬酸进行护色及pH调节;
S3、破碎打浆:利用双道打浆机对预煮后的胡萝卜进行破碎打浆成胡萝卜原浆;
S4、灭酶:利用套管杀菌机将胡萝卜浆中含有的植物酶进行灭活;
S5、酶解:添加复合果浆酶(1.0‰-2.0‰)、淀粉酶(0.2‰-0.5‰),控制酶解温度45℃-55℃,酶解时间1.5h-2.5h;
S6、沉降澄清:在酶解后的胡萝卜原浆中添加5-10‰的壳聚糖,沉降0.5-1.0h;
S7、硅藻土过滤:在果浆中添加5‰-10‰的800#硅藻土,使用板框压滤机进行过滤;再按3:1比例添加300#硅藻土和10#硅藻土5‰-8‰,使用硅藻土过滤机进行过滤得到澄清胡萝卜原汁;
S8、真空浓缩:使用三效蒸发器将胡萝卜原汁进行浓缩至38-42Brix;
S9、杀菌、灌装:经列管杀菌机对二次浓缩后的胡萝卜汁进行杀菌(121℃,30s),灌装得成品浓缩胡萝卜汁。
本发明的一种浓缩胡萝卜清汁加工工艺,所述步骤S1中还包括人工修整去除有损伤的胡萝卜。
本发明的一种浓缩胡萝卜清汁加工工艺,所述步骤S4中套管升温温度88-92℃,出口温度48-52℃。
本发明的一种浓缩胡萝卜清汁加工工艺,所述步骤S5中酶解终点判断方式为:取胡萝卜浆经滤纸自然过滤后取滤液进行果胶试验(酸化酒精与滤液比1:1,结果应为阴性)和淀粉实验(0.01mol/l碘标准溶液滴入约20ml滤液中,结果应为阴性、即不变色)。
本发明的一种浓缩胡萝卜清汁加工工艺,所述步骤S6中壳聚糖先经pH3.8-4.2的温水溶解后再进行添加。
与现有技术相比本发明的有益效果为:本发明将新鲜胡萝卜经冷预煮、破碎、打浆制成胡萝卜原浆,再将胡萝卜原浆经酶解、沉降、硅藻土过滤、浓缩得浓缩胡萝卜清汁,能够长期保持澄清状态,保持新鲜胡萝卜特有的气味。
具体实施方式
下面结合实施例,对本发明的具体实施方式作进一步详细描述。以下实施例用于说明本发明,但不用来限制本发明的范围。
实施例1:
S1、原料清洗修整:去除胡萝卜表面的泥沙、杂草等,人工修整去除有损伤的胡萝卜;
S2、切分预煮:利用切菜机将胡萝卜分切成块状,利用螺旋预煮机对胡萝卜进行预煮软化,同时添加4‰的柠檬酸进行护色及pH调节;
S3、破碎打浆:利用双道打浆机对预煮后的胡萝卜进行破碎打浆成胡萝卜原浆;
S4、灭酶:利用套管杀菌机将胡萝卜浆中含有的植物酶进行灭活,套管升温温度88-92℃,出口温度48-52℃;
S5、酶解:添加复合果浆酶(2.0‰)、淀粉酶(0.5‰),控制酶解温度45℃-55℃,酶解时间1.5h-2.5h;酶解终点判断方式为:取胡萝卜浆经滤纸自然过滤后取滤液进行果胶试验(酸化酒精与滤液比1:1,结果应为阴性)和淀粉实验(0.01mol/l碘标准溶液滴入约20ml滤液中,结果应为阴性、即不变色);
S6、沉降澄清:在酶解后的胡萝卜原浆中添加5‰的壳聚糖(壳聚糖先经pH3.8-4.2的温水溶解后再进行添加),沉降0.5-1.0h;
S7、硅藻土过滤:在果浆中添加10‰的800#硅藻土,使用板框压滤机进行过滤;再按3:1比例添加300#硅藻土和10#硅藻土5‰,使用硅藻土过滤机进行过滤得到澄清胡萝卜原汁;

S5、酶解:添加复合果浆酶(1.5‰)、淀粉酶(0.34‰),控制酶解温度45℃-55℃,酶解时间1.5h-2.5h;酶解终点判断方式为:取胡萝卜浆经滤纸自然过滤后取滤液进行果胶试验(酸化酒精与滤液比1:1,结果应为阴性)和淀粉实验(0.01mol/l碘标准溶液滴入约20ml滤液中,结果应为阴性、即不变色);
S6、沉降澄清:在酶解后的胡萝卜原浆中添加7‰的壳聚糖(壳聚糖先经pH3.8-4.2的温水溶解后再进行添加),沉降0.5-1.0h;
S7、硅藻土过滤:在果浆中添加8‰的800#硅藻土,使用板框压滤机进行过滤;再按3:1比例添加300#硅藻土和10#硅藻土7‰,使用硅藻土过滤机进行过滤得到澄清胡萝卜原汁;
S8、真空浓缩:使用三效蒸发器将胡萝卜原汁进行浓缩至38-42Brix;
S9、杀菌、灌装:经列管杀菌机对二次浓缩后的胡萝卜汁进行杀菌(121℃,30s),灌装得成品浓缩胡萝卜汁。

S2、切分预煮:利用切菜机将胡萝卜分切成块状,利用螺旋预煮机对胡萝卜进行预煮软化,同时添加4-8‰的柠檬酸进行护色及pH调节;
S3、破碎打浆:利用双道打浆机对预煮后的胡萝卜进行破碎打浆成胡萝卜原浆;
S4、灭酶:利用套管杀菌机将胡萝卜浆中含有的植物酶进行灭活;
S5、酶解:添加复合果浆酶(1.0‰-2.0‰)、淀粉酶(0.2‰-0.5‰),控制酶解温度45℃-55℃,酶解时间1.5h-2.5h;
S6、沉降澄清:在酶解后的胡萝卜原浆中添加5-10‰的壳聚糖,沉降0.5-1.0h;
S7、硅藻土过滤:在果浆中添加5‰-10‰的800#硅藻土,使用板框压滤机进行过滤;再按3:1比例添加300#硅藻土和10#硅藻土5‰-8‰,使用硅藻土过滤机进行过滤得到澄清胡萝卜原汁;
S8、真空浓缩:使用三效蒸发器将胡萝卜原汁进行浓缩至38-42Brix;
