本发明公开了一种保健西瓜子及其制备方法,由下列重量份的原料制成:西瓜子100-150、桂花2-3、玉竹3-4、熟地2-3、甘草1-2、竹叶兰2-3、芦根1-2、绞股蓝2-3、食盐5-15、调味液适量。本发明保健西瓜子添加山药、龙眼等成分调味,丰富营养,色泽光滑香醇浓郁口感滋甜;同时吸收中药有益成分,增加保健功效,其中玉竹有养阴润燥、生津止渴的功效,芦根有除烦、利尿的功效,绞股蓝有益气安神、解毒抗癌的功效,有益身体健康。

本发明涉及一种保健西瓜子及其制备方法,属于食品加工技术领域。
背景技术
瓜子的种类较多:有葵花子、白瓜子、吊瓜子、西瓜子、黄瓜子、丝瓜子等,其营养丰富,香气诱人,含丰富的不饱和脂肪酸、优质蛋白、钾、磷、钙、镁、硒元素及维生素E、维生素B1等营养元素,在人们生活中是不可缺少的零食。近年来,瓜子的种类越来越多,为了丰富瓜子的品种口味,有利于人们的身体健康,现在的瓜子应该逐渐像保健食品方向发展。
发明内容
本发明的目的在于提供一种保健西瓜子及其制备方法。
本发明采用的技术方案如下:
一种保健西瓜子,由下列重量份的原料组成:
西瓜子100-150、桂花2-3、玉竹3-4、熟地2-3、甘草1-2、竹叶兰2-3、芦根1-2、绞股蓝2-3、食盐5-15、调味液适量;
所述的调味液的制备方法,包括以下步骤:
(1)、称取下列重量份的原量:山药5-10、龙眼5-10、红枣10-15、红糖10-15、食盐5-8、料酒20-30、生姜5-6、丁葵草2-3、柠檬草2-3、芥菜籽2-3、水适量;
(2)、将龙眼去壳去核,红枣去核,将处理的龙眼、红枣与蒸熟去皮切块山药一起送入打浆机打制成浆得浆糊,将红糖加3-5倍水搅拌溶解,倒入浆糊搅拌均匀,在40-47℃加入0.2-0.4%的果浆酶酶解2-3小时,得酶解物;
(3)、将生姜、丁葵草、柠檬草、芥菜子等破碎成颗粒,加水煎煮过滤去渣,得调香液;
(4)、将调香液、食盐、酶解物搅拌均匀,在75-82℃焖润40-60分钟,离心过滤去渣,滤液与料酒混匀,密封静置1-2小时即得调味液。
所述的保健西瓜子的制备方法,包括以下步骤:
(1)、将桂花、玉竹、熟地、甘草、竹叶兰、芦根、绞股蓝等加3-4倍量水煎煮,过滤去渣,得保健液;
(2)、将西瓜子与保健液混合均匀,加水至覆盖西瓜子,在40-55℃浸泡3-5小时,再加热煮沸30-50分钟,捞出西瓜子,沥干余水晒干;
(3)、将晒干西瓜子重量30-45%的调味液、食盐与西瓜子搅拌均匀,浸泡2-3小时,文火翻炒至干,再送入机械化炒制机,在220-230℃炒制30-60秒至熟香,冷却即得。
本发明的有益效果为:

具体实施方式
一种保健西瓜子,由下列重量(kg)的原料组成:
西瓜子120、桂花3、玉竹4、熟地2、甘草2、竹叶兰3、芦根2、绞股蓝3、食盐8、调味液适量;
所述的调味液的制备方法,包括以下步骤:
(1)、称取下列重量份的原量:山药8、龙眼10、红枣15、红糖15、食盐5、料酒30、生姜6、丁葵草2、柠檬草3、芥菜籽2、水适量;
(2)、将龙眼去壳去核,红枣去核,将处理的龙眼、红枣与蒸熟去皮切块山药一起送入打浆机打制成浆得浆糊,将红糖加5倍水搅拌溶解,倒入浆糊搅拌均匀,在46℃加入0.4%的果浆酶酶解2小时,得酶解物;
(3)、将生姜、丁葵草、柠檬草、芥菜子等破碎成颗粒,加水煎煮过滤去渣,得调香液;
(4)、将调香液、食盐、酶解物搅拌均匀,在82℃焖润50分钟,离心过滤去渣,滤液与料酒混匀,密封静置1-2小时即得调味液。
所述的保健西瓜子的制备方法,包括以下步骤:
(1)、将桂花、玉竹、熟地、甘草、竹叶兰、芦根、绞股蓝等加3-4倍量水煎煮,过滤去渣,得保健液;
(2)、将西瓜子与保健液混合均匀,加水至覆盖西瓜子,在55℃浸泡5小时,再加热煮沸48分钟,捞出西瓜子,沥干余水晒干;
(3)、将晒干西瓜子重量45%的调味液、食盐与西瓜子搅拌均匀,浸泡3小时,文火翻炒至干,再送入机械化炒制机,在230℃炒制60秒至熟香,冷却即得。

1.一种保健西瓜子,其特征在于,由下列重量份的原料组成:
西瓜子100-150、桂花2-3、玉竹3-4、熟地2-3、甘草1-2、竹叶兰2-3、芦根1-2、绞股蓝2-3、食盐5-15、调味液适量;
所述的调味液的制备方法,包括以下步骤:
(1)、称取下列重量份的原量:山药5-10、龙眼5-10、红枣10-15、红糖10-15、食盐5-8、料酒20-30、生姜5-6、丁葵草2-3、柠檬草2-3、芥菜籽2-3、水适量;
(2)、将龙眼去壳去核,红枣去核,将处理的龙眼、红枣与蒸熟去皮切块山药一起送入打浆机打制成浆得浆糊,将红糖加3-5倍水搅拌溶解,倒入浆糊搅拌均匀,在40-47℃加入0.2-0.4%的果浆酶酶解2-3小时,得酶解物;
(3)、将生姜、丁葵草、柠檬草、芥菜子等破碎成颗粒,加水煎煮过滤去渣,得调香液;
(4)、将调香液、食盐、酶解物搅拌均匀,在75-82℃焖润40-60分钟,离心过滤去渣,滤液与料酒混匀,密封静置1-2小时即得调味液。
2.一种如权利要求1所述的保健西瓜子的制备方法,其特征在于包括以下步骤:
(1)、将桂花、玉竹、熟地、甘草、竹叶兰、芦根、绞股蓝等加3-4倍量水煎煮,过滤去渣,得保健液;
(2)、将西瓜子与保健液混合均匀,加水至覆盖西瓜子,在40-55℃浸泡3-5小时,再加热煮沸30-50分钟,捞出西瓜子,沥干余水晒干;
(3)、将晒干西瓜子重量30-45%的调味液、食盐与西瓜子搅拌均匀,浸泡2-3小时,文火翻炒至干,再送入机械化炒制机,在220-230℃炒制30-60秒至熟香,冷却即得。
