背景技术
随着社会不断的进展,人们的生活水平也是提高了很多,很多人开始注重自己身体健康的问题,尤其是中老年人,由于现代人们的饮食水平提高,生活饮食逐渐精细,人们习惯以大米、小麦等含赖氨酸较少的谷物为主食,这种饮食结构使人们容易患有高血压、动脉硬化、肥胖症等疾病,对中老年人身体有很大的危害。那么,中老年人盖如何健康饮食呢?早在《黄帝内经·素问》中就提出了“五谷为养,五果为助,五畜为益,五菜为充,气味合而服之,以补精益气”的饮食调养的原则,同时也说明了五谷杂粮在饮食中的主导地位。营养学认为,最好的饮食其实是平衡膳食。为此,本发明提供了一种杂粮保健粉,采用胚芽米、黑米、黑豆等粗杂粮为主原料,平衡人们的膳食结构,且添加中草药和果蔬等,均衡中老年人所需的营养,且有增强免疫力、软化血管等功效,适合中老年人群食用。
发明内容
基于以上所述,本发明的目的在于提供一种适合中老年人的杂粮保健粉。
为实现上述目的,本发明采取以下技术方案:一种适合中老年人的杂粮保健粉,包括以下重量份的原料:胚芽米40-60份、黑米10-15份、黑豆15-25份、蛋白多肽粉5-10份、仙人掌粉3-5份、魔芋粉1-2份、黑芝麻2-4份、核桃1-2份、荞麦4-6份、螺旋藻2-4份、葛根1-2份、黄芪2-3份、黄精2-4份、茯苓1-2份、琼珍灵芝2-3份、桑葚子1-2份、薏仁2-3份、陈皮1-2份、芡实1-2份、决明子1-2份、枸杞1-2份、菊花1-3份、何首乌1-2份、西芹2-3份、胡萝卜2-4份、黄瓜1-2份、蔓越莓2-3份、雪梨3-4份。
所述蛋白多肽粉选自花生多肽、苦瓜多肽、大豆肽粉中的一种或几种。
上述杂粮保健粉还包括葵花籽油2-3份。
上述杂粮保健粉的制备方法,包括如下步骤:
(1)药液制备:按配方比例称取葛根、黄芪、黄精、茯苓、琼珍灵芝、桑葚子、薏仁、陈皮、芡实、决明子、枸杞、菊花、何首乌混合后,加入上述总药材重量的15-18倍量水,水中浸泡1-1.5h,加热至95-105℃,大火煮沸后小火继续煎煮2-3h,用4层纱布滤过得药液,待用;
(2)磨粉:将黑芝麻、核桃、荞麦、螺旋藻用粉碎机粉碎,控制在100-200目筛出粉;
(3)果蔬打成复合汁液:按照配方比例称取西芹、胡萝卜、黄瓜、蔓越莓、雪梨,用清水洗净后,将上述所有果蔬切碎混合置于搅拌机中,加入总果蔬重量的2-3倍量水,然后打成混合汁液,过滤得复合果蔬汁液;其中,雪梨洗净取其果肉;搅拌机的搅拌速度为500r/min,搅拌时间为15-20min;
(4)将步骤(2)所得的混合粉末加入步骤(3)所得的复合果蔬汁液中,喷雾干燥得粉料;
(5)将胚芽米、黑米、黑豆洗净、除去杂质加入步骤(1)所得的药液和葵花籽油,加热煮至熟烂,捣成泥状,烘干,研磨成杂粮粉;
(6)将步骤(5)所得的杂粮粉与步骤(4)所得的粉料混合后,再加入蛋白多肽粉、仙人掌粉和魔芋粉,混合均匀,灭菌,即得杂粮保健粉。
所述步骤(4)中的喷雾干燥,其压力为5-20MPa,温度为150-300℃,干燥时间为2-4h。
所述步骤(5)所得的杂粮粉粒度为100-200目。
所述步骤(6)的灭菌方式为微波杀菌。
胚芽米是保留米的胚芽部分,其他部分则与白米完全相同的一种米。由胚芽米机碾磨水稻生产出来,不同的胚芽米机胚芽米保留胚芽率不同,一般在60%-70%左右。胚芽米真正作到保全糙米营养,并留存新米的鲜香。其富含人体所需的蛋白质、淀粉、B族维生素、矿物质、膳食纤维,以及丰富的钙、铁、锌等微量元素,营养价值极高,具有能排泄体内的有毒物质,辅助其他营养素的吸收,培育对人体有益的细菌,合成维他命,抵制对人体有害的恶菌,解除便秘,减低大肠的内压,降低胆固醇与中性脂肪的血中浓度,预防与改善肥胖,使血糖值正常化,能适当均衡地摄取微量元素等作用。
黑米为黑稻加工产品,属于糯米类,是由禾本科植物稻经长期培育形成的一类特色品种。营养丰富,食、药用价值高,除煮粥外还可以制作各种营养食品和酿酒,素有“黑珍珠”和“世界米中之王”的美誉。用黑米熬制的米粥清香油亮,软糯适口,营养丰富,具有很好的滋补作用,因此被称为“补血米”、“长寿米”等;中国民间有“逢黑必补”之说。常食能乌发润肤美容,补脑益智,还能补血。
黑豆为豆科植物大豆的黑色种子。又名橹豆、黑大豆等,味甘性平。黑豆具有高蛋白、低热量的特性,外皮黑,里面黄色或绿色。黑豆富含对人体有益的氨基酸、不饱和脂肪酸及钙、磷等多种微量元素。有排脓拔毒、消肿止痛等功效,并有益于防治高血压、高血脂、心脏病等疾病。

魔芋,它是一种根茎植物,含有葡萄甘露聚糖,是一种高分子化合物,具有很强的吸水性,吸水后体积可膨胀80-100倍,食后易被消化吸收。经研究证明它具有降脂、降糖、防癌、通便等多种功用;并能吸附胆固醇和胆汁酸,对降低血压,减少心血管病发作有一定效用。魔芋还含有可溶性膳食纤维,这种纤维对抑制餐后血糖升高很有效,因而魔芋精粉及其制品都是糖尿病患者理想的降糖食品;应用后可减轻胰岛负担。魔芋具有多种防病保健功用,经常食用魔芋食品对身体大有好处。

黄芪,又名绵芪,味甘,性微温。黄芪是百姓经常食用的纯天然品,民间流传着“常喝黄芪汤,防病保健康”的顺口溜,意思是说经常用黄芪煎汤或泡水代茶饮,具有良好的防病保健作用。现代医学研究表明,黄芪有增强机体免疫功能、保肝、利尿、抗衰老、抗应激、降压和较广泛的抗菌作用。能消除实验性肾炎蛋白尿,增强心肌收缩力,调节血糖含量。黄芪不仅能扩张冠状动脉,改善心肌供血,提高免疫功能,而且能够延缓细胞衰老的进程。黄芪食用方便,可煎汤,煎膏,浸酒,入菜肴等。
黄精味甘性平,可作久服滋补之品,是生活中常见的中草药,含有多种对人体有益的化学成分,如多糖,甾体皂苷,蒽醌类,生物碱,强心苷,木脂素,维生素和氨基酸等,具有补气养阴,健脾益肾,补肝气的功效。现代药理研究也表明黄精具有延缓衰老,改善记忆力,提高人体免疫力,抗炎,抗衰老,抗病毒,抗肿瘤等作用。
茯苓,又称玉灵、茯灵、万灵桂、茯菟。是拟层孔菌科真菌茯苓的干燥菌核,外皮淡棕色或黑褐色,内部粉色或白色,精制后称为白茯苓或者云苓。具有宁心安神、败毒抗癌、抑制胃酸分泌、增强免疫力、抗菌、抗肿瘤以及镇静、降血糖等的作用。药性平和,利湿而不伤正气。适量服食可作为春夏潮湿季节的调养佳品。
琼珍灵芝是天然纯正地道的“林中灵”林下灵芝,被誉为“灵芝中的灵芝”,具有非常高的药用价值。琼珍灵芝含有200多种高分子多糖体,可防治肿瘤、糖尿病,早衰,高血压、过敏疾病,肝脏疾病,以及促进免疫功能改善。它还含有包括人体所必需的20多种氨基酸,以及具有药理活性的化学物质:如生物碱、腺甘、麦角甾醇、微量元素、三萜类化合物等,尤其三萜类化合物里的灵芝酸,能有效的降血脂、降血糖、平稳血压,而灵芝中各种有效成分之间,具有协同作用。药典中记载“灵芝扶正固本,可医治百病”在现代研究中发现:琼珍灵芝是通过激发、调节,增强人体的免疫力和自愈力的功能来抵抗疾病,适合糖尿病、高血压、高血脂、肿瘤、失眠等慢性病的治疗和调养。
桑葚子是桑树的果实,又名桑葚,桑果,桑椹。因桑葚子特殊的生长环境,使桑果具有天然生长,无任何污染的特点,所以桑椹又被称为“民间圣果”。桑葚子含有丰富的活性蛋白、维生素、氨基酸、胡萝卜素、矿物质等成分,营养是苹果的5-6倍,是葡萄的4倍,具有多种功效,被医学界誉为“二十一世纪的最佳保健果品”。常吃桑椹能显著提高人体免疫力,具有延缓衰老,美容养颜的功效。
薏仁味甘淡,微寒,有健脾、补肺、清热、祛风湿、强筋骨、补正气、利肠胃、利尿、消水肿等功效。薏仁是我国古老的粮药兼用作物,蛋白质含量平均比稻米、小麦、玉米等高5-8%;脂肪含量高2-5%。薏仁素为中老年人日常滋补和美容佳品。
陈皮:温;辛、苦;归脾、肺经。具有健脾和胃,行气宽中,降逆化痰的功效。陈皮有助于消化,因为陈皮含有类柠檬苦素,这种类柠檬苦素味平和,易溶解于水,此外,陈皮含有挥发油、橙皮甙、维生素B、C等成分,它所含的挥发油对胃肠道有温和刺激作用,可促进消化液的分泌,排除肠管内积气,增加食欲。
芡实又名鸡头米,为睡莲科植物芡的干燥成熟种仁,是一种中药材,有收敛固精等功效,适量食用对身体有好处。中医认为,芡实味甘、涩,性平,归脾、肾经,具有益肾固精,补脾止泻,祛湿止带的功能,白浊、带下、遗精、小便不禁、兼湿浊者尤其适合食用芡实。芡实具有很高的食疗价值,古药书中指出,芡实是“婴儿食之不老,老人食之延年”的粮菜佳品,具有“补而不峻”、“防燥不腻”的特点。芡实还含有丰富的淀粉和多种维生素,孕妇多吃能吸收热量和体内所需的营养成分。
决明子是“决明”的种子,为常用中药,种子入药。决明子又称“还瞳子”,决明子含有多种维生素和丰富的氨基酸、脂肪、碳水化合物等,近年来其保健功能日益受到人们的重视。具有清肝明目、通便的功能。主治高血压、头痛、眩晕、急性结膜炎、角膜溃疡、青光眼、痈疖疮疡等症。用其叶泡茶,中老年人长期饮用,可使血压正常,大便通畅。
何首乌味苦甘涩、性微温,归肝、肾经;性和质涩,可升可降。何首乌含有大黄酚、大黄素、大黄酸、大黄素甲醚、脂肪油、淀粉、糖类、土大黄甙、卵磷脂等有效成分,具有补肝肾,益精血,润肠通便,祛风解毒,截疟等功效。
蔓越莓:又称蔓越橘、小红莓、酸果蔓,其含有大量的维生素、类黄酮素等抗氧化物质及丰富果胶,营养十分丰富。蔓越莓的药用、营养、保健作用十分明显,对人体具有很多的保健作用,经常食用可以清除体内自由基,抑制多种细菌生长和繁殖。有预防妇女常见泌尿道感染问题,降低胃溃疡及胃癌的发生率,减少心血管老化病变,抗老化、预防老年痴呆,降低胆固醇、甘油三酯,养颜美容、维持肌肤年轻健康等作用。
葵花籽油颜色金黄,澄清透明,气味清香,是一种重要的食用油。葵花籽油中还含有比较多的维生素A和胡萝卜素,有治疗夜盲症,预防癌症、降低血清胆固醇的浓度的作用。它含有大量的亚油酸等人体必需的不饱和脂肪酸,可以促进人体细胞的再生和成长,保护皮肤健康,并能减少胆固醇在血液中的淤积,因而是一种高级营养油。葵花油还可以强身壮体、延年益寿。
本发明的有益效果:本发明的杂粮保健粉属于一种保健食品,原料配方搭配合理,富含多种人体必需的营养成分,将多种粗杂粮、绿色果蔬与中草药的营养成分结合,提高了粗杂粮的营养价值且达到养生的效果,不仅营养丰富,而且易消化,长期食用有扶正固本、增强免疫力、清除体内自由基、软化血管、降低胆固醇和血压、延缓细胞衰老、抗癌抑癌等功效,适合中老年人群食用。
具体实施方式
以下对本发明的具体实施方式进行详细说明。应当理解的是,此处所描述的具体实施方式仅用于说明和解释本发明,并不局限于这些实施例。实施例中,花生多肽、苦瓜多肽、大豆肽粉为菏泽中食肽好生物制品厂产品,其他原料为市售产品。
实施例1
一种适合中老年人的杂粮保健粉,包括以下重量份的原料:
胚芽米50份、黑米12份、黑豆18份、花生多肽4份、苦瓜多肽4份、仙人掌粉4份、魔芋粉1份、黑芝麻3份、核桃1份、荞麦5份、螺旋藻3份、葛根1份、黄芪2份、黄精3份、茯苓1份、琼珍灵芝2.5份、桑葚子1份、薏仁2份、陈皮1.5份、芡实1份、决明子1份、枸杞1份、菊花2份、何首乌1份、西芹2份、胡萝卜3份、黄瓜1份、蔓越莓2份、雪梨3份、葵花籽油3份。
上述杂粮保健粉的制备方法,包括如下步骤:
(1)药液制备:按配方比例称取葛根、黄芪、黄精、茯苓、琼珍灵芝、桑葚子、薏仁、陈皮、芡实、决明子、枸杞、菊花、何首乌混合后,加入上述总药材重量的15-18倍量水,水中浸泡1-1.5h,加热至95-105℃,大火煮沸后小火继续煎煮2-3h,用4层纱布滤过得药液,待用;
(2)磨粉:将黑芝麻、核桃、荞麦、螺旋藻用粉碎机粉碎,控制在100-200目筛出粉;
(3)果蔬打成复合汁液:按照配方比例称取西芹、胡萝卜、黄瓜、蔓越莓、雪梨,用清水洗净后,将上述所有果蔬切碎混合置于搅拌机中,加入总果蔬重量的2-3倍量水,然后打成混合汁液,过滤得复合果蔬汁液;其中,雪梨洗净取其果肉;搅拌机的搅拌速度为500r/min,搅拌时间为15-20min;
(4)将步骤(2)所得的混合粉末加入步骤(3)所得的复合果蔬汁液中,喷雾干燥得粉料;
(5)将胚芽米、黑米、黑豆洗净、除去杂质加入步骤(1)所得的药液和葵花籽油,加热煮至熟烂,捣成泥状,烘干,研磨成杂粮粉;
(6)将步骤(5)所得的杂粮粉与步骤(4)所得的粉料混合后,再加入蛋白多肽粉、仙人掌粉和魔芋粉,混合均匀,微波杀菌,即得杂粮保健粉。
实施例2
一种适合中老年人的杂粮保健粉,包括以下重量份的原料:
胚芽米45份、黑米15份、黑豆20份、花生多肽3份、苦瓜多肽3份、大豆肽粉2份、仙人掌粉4份、魔芋粉1.5份、黑芝麻3份、核桃1.5份、荞麦5份、螺旋藻4份、葛根1-2份、黄芪2份、黄精3份、茯苓1份、琼珍灵芝3份、桑葚子1.5份、薏仁2份、陈皮1.5份、芡实1份、决明子1.5份、枸杞1.5份、菊花2份、何首乌1.5份、西芹2.5份、胡萝卜3份、黄瓜1份、蔓越莓2份、雪梨4份、葵花籽油2份。
上述杂粮保健粉的制备方法,包括如下步骤:
(1)药液制备:按配方比例称取葛根、黄芪、黄精、茯苓、琼珍灵芝、桑葚子、薏仁、陈皮、芡实、决明子、枸杞、菊花、何首乌混合后,加入上述总药材重量的15-18倍量水,水中浸泡1-1.5h,加热至95-105℃,大火煮沸后小火继续煎煮2-3h,用4层纱布滤过得药液,待用;

(4)将步骤(2)所得的混合粉末加入步骤(3)所得的复合果蔬汁液中,喷雾干燥得粉料;
(5)将胚芽米、黑米、黑豆洗净、除去杂质加入步骤(1)所得的药液和葵花籽油,加热煮至熟烂,捣成泥状,烘干,研磨成杂粮粉;
(6)将步骤(5)所得的杂粮粉与步骤(4)所得的粉料混合后,再加入蛋白多肽粉、仙人掌粉和魔芋粉,混合均匀,微波杀菌,即得杂粮保健粉。
效果试验:
随机选取60名身体状况差不多的老年人作为志愿者,随机等分为两组,分别食用实施例1、2制备出的杂粮保健粉,使用方法为一天一次至两次,当作早餐或/和晚餐食用,使用时间为一个月。一个月后,志愿者普遍反映杂粮保健粉食用口感较好,且对肠胃和消化有护理作用、亦对血糖有较好调节作用,比普通米粉营养价值高,易被老年人接受。
Claims (7)
1.一种适合中老年人的杂粮保健粉,其特征在于,包括以下重量份的原料:胚芽米40-60份、黑米10-15份、黑豆15-25份、蛋白多肽粉5-10份、仙人掌粉3-5份、魔芋粉1-2份、黑芝麻2-4份、核桃1-2份、荞麦4-6份、螺旋藻2-4份、葛根1-2份、黄芪2-3份、黄精2-4份、茯苓1-2份、琼珍灵芝2-3份、桑葚子1-2份、薏仁2-3份、陈皮1-2份、芡实1-2份、决明子1-2份、枸杞1-2份、菊花1-3份、何首乌1-2份、西芹2-3份、胡萝卜2-4份、黄瓜1-2份、蔓越莓2-3份、雪梨3-4份。
2.根据权利要求1所述的一种适合中老年人的杂粮保健粉,其特征在于:所述蛋白多肽粉选自花生多肽、苦瓜多肽、大豆肽粉中的一种或几种。
3.根据权利要求1所述的一种适合中老年人的杂粮保健粉,其特征在于:还包括葵花籽油2-3份。
4.根据权利要求1所述的适合中老年人的杂粮保健粉的制备方法,其特征在于,包括如下步骤:
(1)药液制备:按配方比例称取葛根、黄芪、黄精、茯苓、琼珍灵芝、桑葚子、薏仁、陈皮、芡实、决明子、枸杞、菊花、何首乌混合后,加入上述总药材重量的15-18倍量水,水中浸泡1-1.5h,加热至95-105℃,大火煮沸后小火继续煎煮2-3h,用4层纱布滤过得药液,待用;
(2)磨粉:将黑芝麻、核桃、荞麦、螺旋藻用粉碎机粉碎,控制在100-200目筛出粉;
(3)果蔬打成复合汁液:按照配方比例称取西芹、胡萝卜、黄瓜、蔓越莓、雪梨,用清水洗净后,将上述所有果蔬切碎混合置于搅拌机中,加入总果蔬重量的2-3倍量水,然后打成混合汁液,过滤得复合果蔬汁液;其中,雪梨洗净取其果肉;搅拌机的搅拌速度为500r/min,搅拌时间为15-20min;
(4)将步骤(2)所得的混合粉末加入步骤(3)所得的复合果蔬汁液中,喷雾干燥得粉料;
(5)将胚芽米、黑米、黑豆洗净、除去杂质加入步骤(1)所得的药液和葵花籽油,加热煮至熟烂,捣成泥状,烘干,研磨成杂粮粉;
(6)将步骤(5)所得的杂粮粉与步骤(4)所得的粉料混合后,再加入蛋白多肽粉、仙人掌粉和魔芋粉,混合均匀,灭菌,即得杂粮保健粉。
5.根据权利要求4所述的适合中老年人的杂粮保健粉的制备方法,其特征在于:所述步骤(4)中的喷雾干燥,其压力为5-20MPa,温度为150-300℃,干燥时间为2-4h。
6.根据权利要求4所述的适合中老年人的杂粮保健粉的制备方法,其特征在于:所述步骤(5)所得的杂粮粉粒度为100-200目。
7.根据权利要求4所述的适合中老年人的杂粮保健粉的制备方法,其特征在于:所述步骤(6)的灭菌方式为微波杀菌。
