约万余年前,最早的农业社会建立后,人们在开始选择高脂肪动物食品的同时,仍大量食用高纤维的植物性食物充饥。直到发明了谷类粗加工工艺后,埃及人第一次吃上了“白面包”。以后,注重健康的古希腊人发现吃全谷粒黑面包时大便增加。此后,在一段很长的时期内,人们对膳食的兴趣,反复游弋于“粗粮”与“细粮”之间。直到20世纪60年代,几位英国医生报道某些非洲国家的居民,由于食用高纤维食物,平均每日粗纤维摄入量高达35~40克,糖尿病、高脂血症等疾病的发病率比膳食纤维摄入量仅为4~5克的欧美国家的居民明显降低。由此,重新唤起了人们对膳食纤维的兴趣,并开始系统的研究。
我国人民的膳食素以谷类食物为主,并辅以蔬菜果类,所以本无膳食纤维缺乏之虞,但随着生活水平的提高,食物精细化程度越来越高,动物性食物所占比例大为增加。一些大城市居民膳食脂肪的产热比例,已由几十年前的20%~25%增加至目前的40%~45%,而膳食纤维的摄入量却明显降低,所谓生活越来越好,纤维越来越少。由此导致一些所谓现代文明病,如肥胖症、糖尿病、高脂血症等,以及一些与膳食纤维过少有关的疾病,如肠癌、便秘、肠道息肉等发病率日渐增高。目前市面上有很多种饼干,但大都是使用黄油、蔗糖和低筋面粉为主要材料通过200℃左右的高温烤制的高热量饼干,粗纤维太少,淀粉含量过高,生糖和转换热量迅速。因此,近年来,随着消费者需求水平的提高,功能性营养食品的大力开发已成为市场的一个发展方向。
发明内容
为了解决上述问题,本发明提供一种功能性粗纤维养生饼干及其制作方法。
为了实现上述目的,本发明采用了以下技术方案:
一种功能性粗纤维养生饼干,由以下质量份原料制成:面粉100~120份、鸡蛋20~30份、米糠或麦糠5~8份、蔗渣5~8份、丝瓜络3~5份、龙眼壳3~5份、酸角壳3~5份、松针1~2份、桑叶3~5份、覆盆子3~5份、红枣5~8份、食盐3~5份、白糖10~20份、桃仁油3~5份、火麻油3~5份、葵花籽10~15份、薄荷油3~5份。
所述功能性粗纤维养生饼干的制备方法,包括以下步骤:
(1)分别称取所述重量份的米糠或麦糠、蔗渣、丝瓜络、龙眼壳、酸角壳和松针,一起进行超微粉碎,得到粗纤维料粉;
(2)分别称取所述重量份的鲜嫩桑叶、覆盆子和去核红枣肉,加入水,打浆,过滤榨干,弃渣取汁,得到辅料液;
(3)将面粉、鸡蛋、辅料液、粗纤维料粉、食盐、白糖、桃仁油、火麻油、葵花籽和薄荷油混合,揉成面团,面团压辊成型,再烘烤包装即得。
与现有技术相比较,本发明具备的有益效果:
本发明组分简单,成本低廉,配方合理有效,制备方法简便易操作,不含防腐剂但易保存。含有丰富的蛋白质、碳水化合物、脂肪、维生素、矿物质、纤维素等营养成分,最大程度的保留了原料的所有有效成分,特别是纤维素含量高,不可溶性膳食纤维可以促进人体胃肠蠕动,易于消化吸收,从而预防便秘和癌症,食用可达到平衡人体营养,调节机体功能的功效,有较高的食用保健作用,满足了消费者对“粗粮”等健康食品的追求。并且口感较好,营养丰富、色香味美、口感酥松,体积轻,块形完整,易于贮存,便于包装,食用方便。
具体实施方式
下面通过实施例对本发明的技术方案作进一步阐述。
实施例1
一种功能性粗纤维养生饼干,称取如下重量的原料:中、低筋小麦面粉1000克、鸡蛋250克、米糠或麦糠50克、蔗渣50克、丝瓜络30克、龙眼壳30克、酸角壳30克、松针15克、桑叶30克、覆盆子50克、红枣80克、食盐45克、白糖100克、桃仁油30克、火麻油30克、葵花籽120克、薄荷油30克。
所述功能性粗纤维养生饼干的制备方法,包括以下步骤:
(1)将米糠或麦糠、蔗渣、丝瓜络、龙眼壳、酸角壳和松针一起进行超微粉碎,得到粗纤维料粉;
(2)将鲜嫩桑叶、覆盆子和去核红枣肉,加入水,打浆,过滤榨干,弃渣取汁,得到辅料液;
(3)将面粉、鸡蛋、辅料液、粗纤维料粉、食盐、白糖、桃仁油、火麻油、葵花籽和薄荷油混合,揉成面团,面团压辊成型,再烘烤包装即得。
本发明的原料中,米糠或麦糠中平均含蛋白质15%,脂肪16%-22%,糖3%-8%,水分10%,热量大约为125.1KJ/g。脂肪中主要的脂肪酸大多为油酸、亚油酸等不饱和脂肪酸,并含高量维生素、植物醇、膳食纤维、氨基酸及矿物质等。米糠是使大便量增加的有效纤维,米糠中的碳水化合物在肠道中不与消化酶作用,能起到较好的通便效果。
蔗渣含有丰富的纤维素,而含木质素较少,故蔗渣作为纤维原料具有很大的优越性,蔗渣的蛋白质和能量的含量都很低,不会引起肥胖,也同样具有较好的通便效果。
丝瓜络,入经络,解邪热。热除则风去,络中津液不致结合而为痰,变成肿毒诸症,故云解毒耳。
龙眼壳味甜,性温,无毒,有祛风散邪、聪耳明目之功效,可预防头晕耳呜等病。
酸角壳对于暑热伤津,烦躁口干、食积不消,呕逆少食、大便秘结而有热者具有较好治疗效果。
松针味苦、无毒、药性温和,并含有丰富的β-胡萝卜素、维生素C、维生素E,这三种物质被称为抗氧化的“金三角”,三者共同保护人体组织细胞免受氧化,延长了细胞的寿命。
桃仁油具有活血祛瘀,润肠通便,止咳平喘的功效。用于经闭痛经,瘕瘕痞块,肺痈肠痈,跌扑损伤,肠燥便秘,咳嗽气喘。《本草纲目》:桃仁行血,宜连皮、尖生用。润燥活血,宜汤浸去皮、尖炒黄用。或麦麸同炒,或烧存性,各随本方。双仁者有毒,不可食,说见杏仁下。
火麻仁又叫大麻仁或麻仁,为桑科植物大麻的干燥成熟果实。其味甘、性平,入脾、胃,能润燥滑肠,滋养补虚。火麻仁含有丰富的蛋白质、不饱和脂肪酸,还有卵磷脂、亚麻酸、维生素及钙、铁矿物等人体必需的微量元素。食之有润肠胃、滋阴补虚、助消化、明目保肝、祛病益寿之功效,且对老人便秘、高血压和高胆固醇等疾病有特殊的疗效,而且火麻是唯一能够溶于水的油料。
从上可知,本发明原料中米糠或麦糠是粗纤维的主要来源,食用后不能被人体吸收的膳食纤维集结在大便中,使增加大便量,从而起到通便作用;而火麻油、桃仁油和酸角壳均具有治疗便秘的功效,从药理作用上,增强了本发明所述饼干的通便作用;丝瓜络、龙眼壳、松针和桑叶起到丰富所述饼干食疗功能的作用,并且精心挑选桃仁油、火麻油、葵花籽以及薄荷油四种有复配,使得饼干的香气特殊并且容易识别,食用之后口齿生香;覆盆子和红枣用于调味,口感适宜,并且丰富营养成分。
实施例2
一种功能性粗纤维养生饼干,由以下质量份原料制成:面粉100份、鸡蛋20份、米糠或麦糠5份、蔗渣5份、丝瓜络3份、龙眼壳3份、酸角壳3份、松针1份、桑叶3份、覆盆子3份、红枣5份、食盐3份、白糖10份、桃仁油3份、火麻油3份、葵花籽10份、薄荷油3份。本实施例所述功能性粗纤维养生饼干的制备方法与权利要求1相同,不再赘述。
实施例3
一种功能性粗纤维养生饼干,由以下质量份原料制成:面粉120份、鸡蛋30份、米糠或麦糠8份、蔗渣8份、丝瓜络5份、龙眼壳5份、酸角壳5份、松针2份、桑叶5份、覆盆子5份、红枣8份、食盐5份、白糖20份、桃仁油5份、火麻油5份、葵花籽15份、薄荷油5份。本实施例所述功能性粗纤维养生饼干的制备方法与权利要求1相同,不再赘述。
实施例3
一种功能性粗纤维养生饼干,由以下质量份原料制成:面粉110份、鸡蛋25份、米糠或麦糠6份、蔗渣7份、丝瓜络4份、龙眼壳4份、酸角壳4份、松针1.5份、桑叶4份、覆盆子4份、红枣7份、食盐4份、白糖15份、桃仁油4份、火麻油4份、葵花籽12份、薄荷油4份。本实施例所述功能性粗纤维养生饼干的制备方法与权利要求1相同,不再赘述。

1.一种功能性粗纤维养生饼干,其特征在于,由以下质量份原料制成:面粉100~120份、鸡蛋20~30份、米糠或麦糠5~8份、蔗渣5~8份、丝瓜络3~5份、龙眼壳3~5份、酸角壳3~5份、松针1~2份、桑叶3~5份、覆盆子3~5份、红枣5~8份、食盐3~5份、白糖10~20份、桃仁油3~5份、火麻油3~5份、葵花籽10~15份、薄荷油3~5份。
2.如权利要求1所述功能性粗纤维养生饼干的制备方法,包括以下步骤:
(1)分别称取所述重量份的米糠或麦糠、蔗渣、丝瓜络、龙眼壳、酸角壳和松针,一起进行超微粉碎,得到粗纤维料粉;
(2)分别称取所述重量份的鲜嫩桑叶、覆盆子和去核红枣肉,加入水,打浆,过滤榨干,弃渣取汁,得到辅料液;
(3)将面粉、鸡蛋、辅料液、粗纤维料粉、食盐、白糖、桃仁油、火麻油、葵花籽和薄荷油混合,揉成面团,面团压辊成型,再烘烤包装即得。
