Abstract

Proporcionar una solución de lactasa con buena estabilidad térmica según se desea por identificación de un factor para influir sobre la estabilidad térmica en un producto de lactasa y uso del factor como un índice. Proteinasa B con las siguientes propiedades enzimáticas y una solución de lactasa que contiene menos de 11,5 ng de la proteinasa B; 1) que tiene una temperatura óptima de aproximadamente 40ºC, 2) que tiene un pH óptimo de aproximadamente 8,0, 3) que es estable a pH 5,0 - 8,0, 4) que tiene alta especificidad de sustrato por FITC-caseína y lactasa, 5) que tiene una acción de fragmentación de lactasa neutra, y 6) que tiene un peso molecular de aproximadamente 29.700 a 30.000 (por SDS-PAGE).
