Abstract
Un proceso para recuperar una composicion rica en proteínas sustancialmente libre de lípidos de la membrana de tejido muscular animal, dicha composicionrica en proteínas capaz de ser transformada en gel que comprende: la formacion de una solucionlí quida acuosa rica en proteínas que incluye dicha composicionrica en proteínas y que presenta un pH inferior a 3,5 de una forma particulada de dicho tejido muscular animal y una composicion líquida acuosa que presentaun pH inferior a 3,5 que nodegra da sustancialmente las proteínas de dicha composicion rica en proteínas, - la separacion de los lípidos de membrana dedicha solucion que contiene dicha composicion rica en proteínas y la recuperacion de dicha solucion talcomposicion rica en proteínas capaz de sertransformada en gel. Una composicion solida rica en proteínas aislada de un tejido muscular animal que comprende proteínas miofibrilares sustancialmentelibres de lípidos de membrana animal, y dichasproteínas son cap aces de ser transformadas en un gel. Una composicion rica en proteínas aislada de un tejidomuscular animal que comprende proteínas miofibrilares sustancialmente libres de lípidos de membrana animal en una solucion acuosa quepresenta un pH inferi or aaproximadamente 3,5 y dichas proteínas son capaces de ser transformadas en un gel.
