Abstract

La presente invención proporciona un nuevo proceso para preparar composiciones lácteas fortificadas a partir de leche entera de mamífero. El proceso de la presente invención generalmente involucra convertir la leche en polvo de mamífero en una fracción enriquecida en grasas, una fracción enriquecida en proteínas, y una fracción enriquecida en carbohidratos. El proceso comprende tratar la leche en polvo con un agente de extracción de grasas para proporcionar una fracción enriquecida en grasas, y una fracción residual que comprende proteínas y carbohidratos; separar dicha fracción enriquecida en grasas de la fracción residual; y remover el agente de extracción de grasas a partir de la fracción enriquecida en grasas separada para producir una fracción seca de material enriquecido en grasas, aceitoso, y una fracción enriquecida en proteínas y carbohidratos.
