Abstract
Un método y sistema para producir queso panela, resultando como subproducto un suero de leche sin sal o con una mínima cantidad de sal, el método incluye el procesamiento de leche para producir una mezcla de cuajadas de queso y suero de leche, en donde opcionalmente la mezcla se sala incorporando una fracción de una cantidad total de sal requerida para la elaboración del queso panela en cuestión; se extrude, forma y presionan las cuajadas de queso para formar bloques de queso y/o se drena simultáneamente el suero de la cuajadas de queso; opcionalmente se somete a los bloques de queso obtenidos a un proceso de enfriamiento o a un proceso de enfriamiento rápido; y se promueve la absorción de sal inyectando salmuera a los bloques de queso, en donde la cantidad de sal de las salmuera absorbida por el bloque de queso representa el complemento de la cantidad total de sal requerida para la elaboración del queso panela en cuestión. El sistema incluye un tanque, un aparato formador de queso y un inyector de salmuera.
