Abstract
Las porciones de músculo animal son tratadas para formar una porción muscular mejorada, mediante la provisión de una emulsión de carne desmenuzada elaborada a partir de un primer tejido muscular animal y que tiene un pH de aproximadamente 6.5 hasta aproximadamente 9.5, y la adición de la emulsión a una porción muscular animal de una manera que promueve la absorción y/o la distribución de la emulsión dentro de la porción muscular animal, para formar una porción muscular animal. En un aspecto, al menos aproximadamente 70 % en peso de la proteína del tejido en la emulsión es solubilizado, y la proteína no es aislada del tejido. En un aspecto, no más de aproximadamente 30 % en peso de la proteína del tejido es precipitada. En un aspecto, el tejido no es expuesto a ácido de una manera que pudiera provocar que el pH del tejido sea menor de aproximadamente 5.3.
