for EPISODE 4, I’ve made my THAI RED NOODLE SOUP. topped with a seared lion’s mane mushroom + crispy tofu, this is a broth built to warm you up 🔥

INGREDIENTS (serves 2-3)

1 onion
1 carrot
1 pepper
4 garlic cloves
1 thumb size piece of ginger
1 lemongrass stalk
4 tbsp Thai red curry paste
400ml coconut milk
750ml vegetable stock (add more if required)

200g rice noodles
200g firm tofu
2 (lions mane) mushrooms
2 tbsp soy sauce
1 lime

1.Tofu Puffs
These are deep fried and very porous inside, they are suitable for soups, stews, braised dishes and hot pot, it soaks up the sauce very nicely😋
2.Fresh Tender Tofu
This is absolutely our favorite and is the most versatile kind of tofu, you can pan-fry, stir-fry, deep-fry it, have it in soups, stews and braised dishes, just be careful with stir-frying because it can break easily. You can find fresh tofu at many Asian stores and store it in the fridge for up to 3 days.
3.Soft Tofu
This is the packaged version of tender tofu
4.Medium-Firm Tofu
Medium-Firm Tofu contains less water and holds a better shape than tender tofu in cooking, it can be used in stir-fries, stews and soups.
5.Firm Tofu

1 1/2 tbsp tamari
1 tbsp rice vinegar
1 tbsp cornstarch
1 tbsp sesame seeds
1 1/2 tbsp avocado oil

2 tsp avocado oil
1/2 medium yellow onion
4 thin slices of fresh ginger root
5 cloves garlic, thinly sliced
1 Fresno pepper thinly sliced
3 scallions, thinly sliced with white and green ends separated
3 dried shiitake mushrooms
4 1/2 cups hot water
2–3 tbsp yellow miso paste
2 tsp sesame oil, plus more for serving

Ingredients:
Wontons:
- 200g extra firm tofu, pressed and crumbed
- 150g shiitake mushrooms, roughly chopped
- 2-3 spring onions, sliced
- 1 tsp fresh ginger, grated
- 1 tbsp vg oyster sauce
- 2 tbsp low sodium soy sauce
- 1 tbsp shaoxing wine (can use rice vinegar)
- 1 tsp sesame oil
- Pinch of pepper
- 1 tsp cornflour
- 25 wonton sheets

Soup:
- 1 tbsp neutral oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 tsp ginger, grated
- 4 tbsp vg red curry paste
- 4 cups meat free “chicken” stock (I used @oxo )
- 1 can coconut milk
- 1 tbsp sugar
- 1 tbsp vg fish sauce
- 1/2 lime, juice

Method:
