This is an age old traditional recipe. While making any fish or chicken fry, the main steps involved are marinating fish. Then making masala paste and rava mixture. Spread masala mixture on marinated fish or chicken and then coat it with rava. And finally shallow fry it and you can enjoy. While shallow frying the masala coating should not come off. For that we are using a trick!!

Ingredients

  • 500 gm Surmai
  • 1/2 Lemon juice
  • 1 tbsp Ginger-Garlic paste
  • 1/4 tsp Turmeric powder
  • 1/2 tsp Salt
  • Finely chopped Coriander leaves
  • 6 tsp Red chili powder
  • 2 tsp Coriander powder
  • 1 tsp Cumin powder
  • Salt to taste
  • 1 tsp Garam masala
  • 1/4 tsp black Pepper powder
  • 1/4 cup Water
  • 1 cup / 100 gm fine Rava
  • 1 tsp Red chili powder
  • Salt to taste
  • Oil for frying

Instructions

Step 1: Wash surmai really good and wipe extra water on it with a clean cotton cloth or tissue paper. Make sure, you don’t dry the fish completely.

Step 2: Add lemon juice, ginger-garlic paste, turmeric powder, salt and coriander leaves and coat each piece of fish with this marinate well from both sides.

Step 3: Cover and rest for about 15-20 minutes to marinate.

Step 4: Mix red chili powder, coriander powder, cumin powder, salt, garam masala and black pepper powder well together in a bowl and add water.

Step 5: Mix well to make paste of it and masala mix for fish fry is ready.

Step 6: Mix rava, red chili powder and salt well together in a bowl and rava for fish fry is ready.

Step 7: Add the masala mix into the marinated fish and coat each piece of fish well with the masala mix from both sides.

Step 8: Coat each side of the well with rava and press it well so that it won’t come off while frying.

Step 9: Heat up a pan on medium heat and add oil.

Step 10: When the oil is smoking hot, turn the gas on medium and drop fish into it.

Step 11: Fry lower side for about 1 1/2-2 minutes and flip the fish over.

Step 12: Fry the other side for another 1 1/2-2 minutes.

Step 13: When the fish is fried well from both sides, take it out, drain excess oil and transfer it on a wire rack. Surmai fish fry is ready.
