A must have classic and loved by all... Chocolate mousse. Have you tested this version with a custard base by @ecolevalrhona? 

Ingredients: 
900g 35% cream
600g Anglaise base cream 
620g ARAGUANI 72%

1️⃣ Make sure your custard is hot and strained. If necessary add rehydrated gelatin 

2️⃣ Add it gradually over the melted chocolate by emulsion 

3️⃣ Mix to perfect emulsion. Stabilize as necessary 

4️⃣ Once the mixture is smooth, check the temperature: 35/38°C for whites and blondes 
38/41°C for milks 
°47/50°C for darks 

5️⃣ Add the rest of the whipped cream

- 225 dulcey chocolate 
- 450g double cream 
- 225g caster sugar 
- Vanilla bean (to taste)
- 2g fleur de sel 
- 55g unsalted butter 

Method:

- Add the chocolate to a bowl and set a side
- In a small pan, add the cream and vanilla and warm under medium heat
