In the present study, the main factors that influence safety in the production of biscuits are an... more In the present study, the main factors that influence safety in the production of biscuits are analysed through the parallel implementation of the methods FMEA (failure mode and effects analysis) and HACCP in risk management for product safety. It was found that the simultaneous implementation of FMEA and HACCP allows prevention of negative consequences for product safety by improving the process control and management in food production. The obtained synergistic effect of the parallel implementation of the two methods for risk management guarantees the production of safe biscuits with excellent shelf life stability. The methods of analysis and control of aflatoxins in peanuts pursue three key objectives: prevent... more The methods of analysis and control of aflatoxins in peanuts pursue three key objectives: prevent the entry of contaminated peanuts into ready-to-eat products where they are used as an ingredient; prevent and minimize the risk of cross-contamination from contaminated peanuts to fit-for-use raw materials; perform an appropriate incoming inspection through rapid analysis methods for real-time detection of the absence of or the degree of contamination with aflatoxins. The aim of this study was to analyze the effect of rapid detection methods on the minimization and prevention of the risk of contamination with aflatoxins during the incoming inspection in industries using peanut products in the composition of the finished products. The methods of detection of aflatoxins in peanut products are: Mass Spectrometry combined with High - Performance Liquid Chromatography (HPLC), the internal methodology VAL 92:2010 developed by an accredited laboratory and immunochromatographic rapid tests.

Logistics management has the misconception that reducing complaints would increase satisfaction to the same extent. Models for positively influencing satisfaction should contain much more than one variable. The customer satisfaction model used in this chapter contains six latent variables: Logistics satisfaction survey; analysis of data from the survey to measure satisfaction with logistics services; chapter to analyze the risk of noncompliant processes in logistics services; survey data analysis to measure the risk of noncompliant processes in logistics services. The aim of the study is to derive the similarities and differences between the legal requirements laid down in Codex Alimentarius and the private standards for quality management systems and food safety based on a comparative analysis. The methodology used is based on comparison of the requirements, identification of the common elements and the differences, as well as assessment of the compatibility and possibility for integration of these requirements. It has been found that the main innovation in the standard is the determination of the analysis of the risk related to the influence of external and internal factors of the environment. The purpose of this study is to apply in practice a methodology for risk analysis of the external and internal environment of the organization using the example or the case of biscuit production. The model is based on an expert evaluation and includes the simultaneous application of FMEA (failure mode and effects analysis) and PESTLE (Political, Economic, Social, Technological, Legal and Environmental) analyses. approach ISO 9001: 2015 to risk assessment of the process of fumigation of timber wood for export. The goal is achieved by identifying and analyzing the types of risks arising from the process, determined by the impact of the associated external and internal circumstances. In this study, the FMEA method for risk assessment of the fumigation process of timber wood was used. Various factors have been analyzed that can contribute to reliable and consistent asses sments of experts articipating in the study. The results of the risk assessment show that there is a significant risk of inadequate pest control measures in the fumigation process. The results confirm that the quality management system based on ISO 9001: 2015 has a practical application in risk analysis of the fumigation process of timber wood. The basis for achieving better results and preventing negative consequences for the
development of the company exporting timber wood is created through the risk assessment and identification of measures to control the risks to the fumigation process.
