Fix #220 by installing versions of numpy and pillow with Bookworm-compatible piwheels.org binaries. https://www.piwheels.org/project/numpy/ (v2.2.1) https://www.piwheels.org/project/pillow/ (v11.1.0)
Preinstall pandas==2.2.3, since 2.3.0 does not have a PiWheels wheel.

These patches work around PiWheels maintenance period, which has resulted in newer package versions that do not have binary wheels for older Pi's. This typically triggers some long, convoluted build process that will either run forever, hang, or fail with some secondary dependency that pip cannot fulfil.
Fixes various issues raised in #220
