● Ingredients x2 ppl
For the stock
Onion 1/2
Carrot 2
Celery stick 2
Lemon peel 1
Ice Water 350ml
Shrimp peel 

Pasta 180g
Shrimp 1lb
Shallot 1
Butter 10
Olive oil 
White wine 1oz
Basil
Lemon zest 1

●Cooking process 
Start with the stock by searing on high temperature onion, celery, carrot, and shrimp peel. Add ice, lemon peel, salt, and let simmer for at least 1 hour, clean stock by removing foam.
Slice shallot and sear it with olive oil and butter, add stock then add pasta, and cook it in a risotto way by adding water each time pasta absorbed liquid.
Shave Lemon zest, serve it and enjoy
