Cheryl Jonas simply pack beans in jars as you would to pressure cook. Add 3/4 tsp of canning salt. Pour 2 tbsp water over salt. Place lids and rings on jars. Put in a cold oven leaving a small amount of space around each one for heat circulation. Turn temperature to 250 and cook 4 hours. Leave in the oven until cooled.
