Ingredients

  1. 1 cup White chick peas
  2. 1 tablespoon Bicarbonate of soda
  3. 1 Onion thinly sliced
  4. Salt to taste
  5. 2 Black cardamom
  6. 3 Cloves
  7. 10-20 Black pepper corn
  8. Cinnamon stick
  9. 1 tablespoon Cumin seeds
  10. 1 tablespoon Mace
  11. 1 tablespoon Nutmeg
  12. 1 tablespoon Red chilli powder
  13. 1 tablespoon turmeric powder

Cooking Instructions

    Soak chick peas overnight in water

  2. 2

    Drain the water and add bicarbonate of soda into the chick peas, mix thoroughly and keep it aside for 2 hours

  3. 3

    After 2 hours rinse the chickpeas thoroughly with water and make sure that bicarbonate of soda washout completely

  4. 4

    Boil chickpeas on high flame until they become tender

  5. 5

    Grind all the spices (black cardamom, cloves, cinnamon stick, black pepper corn, cumin seeds) to make chana spice mix

  6. 6

    In a pan add oil and add very thinly sliced onions into it and fry it, until golden brown, add chana spice mix, salt, red chilli and turmeric powder into it. Fry for few minutes

    Add this tarka into boiler chickpeas and cook on low heat until oil comes over the surface. Sprinkle lemon over it.

    Lahori chanay are ready to be served. Serve it with raw onions, pickle and green chillies
