Crawfish & Corn Soup (realistically, I'll use shrimp). Butter, onion, bell pepper, celery, Rotel, Emeril’s Essence or any seasoning salt, salt & pepper, whole kernel corn, cream corn, crawfish, evaporated milk.

Cajun Crawfish Potato Salad. Kick up your potato salad a notch. This is a great solution for leftover red potatoes after your crawfish boil.

Spicy Louisiana potato salad (using leftover potatoes from crawfish boil) Ingredients: 1 lb Idaho potatoes (cut into chunks), 4 tbsp mustard (judge by taste), 2 green onions (sliced) 2 celery stalks (chopped), 1 tsp salt, and 1/3 cup dill pickle relish. Directions: If using plain potatoes, place them in enough water to cover in a 4-quart saucepan. Bring to boil; cover, reduce heat, and simmer for 15 min. or until tender. Drain, combine all ingredients, and add TABASCO Green Sauce (to taste).
