Recipe: (makes 1 pancake) For the pancake: • 1/3 cup carrot, shredded • 1/3 cup cabbage, shredded • 50g tofu, crumbled • 1 spring onion, chopped (green parts for garnish) • 1 tsp ginger, finely grated • 1 garlic clove, minced • 1-2 tbsp kimchi, chopped • 1 tsp gochujang • 1 tsp soy sauce • 2 rice paper sheets • 1 tbsp sesame oil For the dipping sauce: • 1 tbsp soy sauce • 1 tbsp rice vinegar • 1 tsp sesame seeds To garnish: • spring onion • sesame seeds Method: 1.
