Supreme and dice the lemon, but save the middle part for the juice. -Season salmon well with salt and pepper -Add oil to a stainless pan over medium high heat -Pat dry salmon, and sear flesh side fairly hard -Remove salmon from the pan and place onto a non stick sprayed sheet try. Bake at 375 until reaches 110f internal -While salmon is baking wipe out your pan, add 1Tbsp butter -Add the garlic and cook while stirring until beginning to brown but not burn -Next add flour and stir in -Add the wine and lemon juice, stir and bring to a boil -Continue to cook while simmering for 4 minutes.
