This one is a mashup of a bunch of things, an earl grey martini but make it a milk punch in a tom collins style cocktail? Following the bones of Three Sheets @threesheetsbars Whisky Soda, gin is infused with earl grey tea for a while, then clarified with milk to remove the potentially overextracted tannins. From there, a bit more gin is added to the mix, alongside sugar, citric acid, lactic acid, and vanilla extract for balance and a little touch of london fog vibes. Add that to some soda and you have something seriously crushable.

150 ml dry gin, plus 50 ml extra

50 ml lemon juice

75 ml milk

100 g sugar

2 g citric acid

0.8 g lactic acid (optional)

0.5 ml vanilla extract

4 g earl grey tea Tom Collins, Lactic Acid, Citric Acid, Earl Grey Tea, Earl Gray, Dry Gin, Vanilla Extract, Gin, Milk
